146.8...Marinara Sauce

For the Tomato Chicken Parmesan that I made last week, I used a homemade sauce. It turned out really delicious…next time I’ll make a double batch and freeze it for the next time I need marinara sauce!

Marinara Sauce (Serves 8)

Recipe from All Recipes

Ingredients:

2 (14.5 ounce) cans stewed Italian style tomatoes

1 (6 ounce) can tomato paste

4 Tbsp. chopped fresh parsley

1 clove garlic, minced

1 tsp. dried oregano

1 tsp. salt

1/4 tsp. ground black pepper

6 Tbsp. olive oil

1/3 cup finely diced onion

1/2 cup white wine

Directions:

1. In a food processor place stewed tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt and pepper. Blend until smooth.

2. in a large skillet over medium heat sauté the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.

3. Simmer for 30 minutes, stirring occasionally.

Lol. That pan looks like a mess but it tasted great! The cheese-less chicken was for my son who’s not a big fan of cheese. 

So….my healthy eating went right out the window for the long Labor Day weekend. Ugh. It’s amazing how quickly you can put on a few pounds but how long it takes to get them off!

I went over to Lisa’s house with some friends for some mimosas before heading off to a Polo Event.

It was a white party so we dressed accordingly.

We had a great time…although I can’t say I paid much attention to the actual game. Lol.

Later that night we met Alicia, Joe and her kids at Hamburger Factory for dinner. I was pretty hungry from the lack of food at lunch and any sort of diet went right out of the window. 

We shared some fabulous hot wings.

There was a new (to us) burger on the menu that Alicia and I HAD to order: The Branding Iron (sliced jalapeño, pepper jack cheese, lettuce and tomato with jalapeño ranch & spicy pickles on the side):

Of course it wasn’t complete without some onion rings! Delicious burger by the way. Worth every calorie.

Monday morning’s breakfast:

We all went to the Padres baseball game. It was boiling outside! We had some food inside before heading out into the heat.

I had saved room for my beloved Carne Asada Fries. These things are amazing.

Eventually the sun started to go down and things cooled off. I enjoyed a couple of cake pops before heading home.

I wasn’t in the mood to cook much of anything for dinner so I defrosted some meat sauce that was in the freezer and boiled some fettuccine and dinner was done. No salad. Nothing else.

My husband had group from his office over for a barbecue so I cooked and prepped for it all morning. I ate a turkey sandwich quickly for lunch before everyone arrived.

After I took the kids to school, I went to spin class. Felt good to sweat out all the crap from the weekend! 

I met some friends for brunch at Tower 23.

We were celebrating our friend Kate’s having all four of her boys start school today! I ordered the Chilaquiles & Eggs.

Now the diet begins again…..
