I was impressed with my use of leftovers last night. I baked some salmon with a mixture of cilantro, lime juice (both leftover from our barbecue), garlic powder and olive oil on top. I put the salmon in corn tortillas (more leftovers) and topped it with leftover Creamy Cole Slaw and Pico de Gallo. I also had some leftover Mexican Bean Salad.
I topped my salmon tacos with lots of Cholula. Delicious!!
My usual breakfast:
I went to a meeting at the school after drop off. Then it was Zumba class. It was so hot in the room I must have lost two pounds in sweat.
Lunch was with some friends at Big Bang Sushi. I recently discovered that I need sushi at least once a week. My weekly fix started with Chile Garlic Edamame.
