Are you making tacos for “Taco Tuesday” tomorrow? If so, I have the perfect Pico de Gallo for you. You can make it as spicy as you want depending on how much jalapeño you use or you can leave the seeds and membranes in the pepper to really kick it up a notch. I made this last week for my husband’s poker group and definitely made it on the hot side!
Pico de Gallo (About 2 cups)
Recipe from Emeril Lagasse
1 1/2 cups seeded, diced tomatoes
1/4 cup diced red onion
1 Tbsp. diced jalapeños
1 Tbsp. minced garlic
Juice of 1-2 limes, depending on taste
2 Tbsp. chopped cilantro
Salt and pepper
1. In a bowl, combine all ingredients.
Saturday night we had some friends over from out of town. We went to our club for dinner. I had the Prosciutto & Arugula Pizza.
Breakfast yesterday morning was the same old, same old.
We drove to Los Angeles to meet up with family for the day. We went to the circus at Staples Center. Before going in, we shared a pizza from Live Basil Pizza because lunch wasn’t going to be until much later and we were hungry.
After the circus, we went to lunch at Rosa Mexicano. By the way, I cannot remember the last time I had been to the circus!!!
I ordered the grilled fish tacos. They were just alright. The corn was good though! Our table also shared guacamole and that was really good.
We all went bowling. I had my highest score ever: 114!! Don’t laugh. I can hear you laughing.
After bowling, we drove back to San Diego. We stopped at Chin’s for dinner. We shared Beef Lo Mein, Orange Chicken and Sesame Chicken.
I guess having four meals yesterday caught up with me. Lol. It was back to work on this Monday morning.
I dropped both kids off at camp, went to Tabata Drills at the gym where I got my a** whooped. I deserved it.
I ran some errands, then home for lunch.
