I’ve been meaning to share My Favorite Guacamole recipe with you. Adjust the spices to your taste. The recipe is a great starting point. I usually end up added more Tabasco. Duh.

My Favorite Guacamole

Recipe from The Barefoot Contessa

Ingredients:

  • 4 ripe Haas avocados
  • 3 tablespoons freshly squeezed lemon juice (1 lemon)
  • 8 dashes hot pepper sauce (I used Tabasco and probably twice this much)
  • 1/2 cup small-diced red onion (1 small onion)
  • 1 large garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 medium tomato, seeded, and small-diced

Directions:

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl.  Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

Friday after picking my daughter up from camp, I took her to Olive Garden for dinner. I had the soup (Minestrone) and salad.

Saturday morning I had my usual (lately) breakfast.

Scrambled eggs and salsa.

I spent the day putting all my kids’ school work from the past year into scrapbooks. Yes…I am organized. And anal.

Lunch was a cobb-type salad:

Lettuce, turkey, corn, black beans, hardboiled egg and ranch dressing.

Last night I went with my husband to another dinner for the golf tournament he was in. Check out the red carpet at the entrance:

There were passed appetizers. I tried a few of them with my favorite being the shrimp salad sliders on Hawaiian rolls.

Dinner was served buffet style. Of course I had to have a bit of everything.

Prim rib, pork roulade, Caesar salad, shrimp & sausage jambalaya and whipped potatoes.

I sampled most things at the dessert buffet as well. :)

Guess my diet kinda went to the crapper last night. Oh well, it was definitely my cheat meal for the week. 

I was back on track this morning with my scrambled eggs for breakfast.

I did some stuff around the house before we all went to lunch at Casa De Bandini in Carlsbad. They had a “healthy items” menu and I ordered the fish burrito from it. The menu said it was 505 calories. I seriously hope that’s true but it’s hard to believe from looking at the plate.

I’m hoping they are right.

We picked up some stuff at the grocery store to barbeque tonight. It will be the first time turning the barbeque on since last summer!

Oh…I got a letter from my son from camp! It said: Dear Mommy & Daddy…the first day of camp was fun. I love you. Bye.” Short and and to the point. :)

When was the last time you barbequed?
