140.6…Tender Italian Baked Chicken

Whenever I want to eat healthier, I try to make dinner at home. You rarely know what you’re getting in a restaurant whereas you know exactly what you’re putting in your dishes at home.

We have been gone so much that making dinner doesn’t happen all the much lately. Last night I was finally able to enjoy a home cooked meal! It was also pretty simple to throw together.

Tender Italian Baked Chicken (Serves 4)

Original Recipe: allrecipes.com

Ingredients:

  • 3/4 cup mayonnaise

  • 1/2 cup grated Parmesan cheese

  • 3/4 teaspoon garlic powder

  • 3/4 cup Italian seasoned bread crumbs

  • 4 skinless, boneless chicken breast halves

Directions:

  1. Preheat oven to 425 degrees.
  2. In a bowl, mix the mayonnaise, Parmesan cheese, and garlic powder. Place bread crumbs in a separate bowl. Dip chicken into the mayonnaise mixture, then into the bread crumbs to coat. Arrange coated chicken on a baking sheet.
  3. Bake 20 minutes in the preheated oven, or until chicken juices run clear and coating is golden brown.

Delicious! I defrosted some Mustard Seed Mashed Potatoes (baked at 350 degrees for 30 minutes-they reheat so well!) and baked some asparagus to go with it.

Breakfast this morning was scrambled Egg Beaters with last night’s leftover asparagus, shredded cheddar cheese and salsa.

After taking the kids to school, I went home for a bit before heading to Alicia’s house. She was hosting a brunch for Dina’s birthday! I ate breakfast earlier in the morning on purpose so I wouldn’t gorge on all sorts of bad-for-me foods.

When I arrived, I was greeted with all sorts of goodies. Quiche:

One slice of quiche, fruit and a mimosa (hold the orange juice).  Not too bad compared to my normal shenanigans.

Oh, and there was also chocolate birthday cake.

After the brunch, I ran a bunch of errands. I came home hungry so I made some tuna salad with some celery for scooping.
