144.2…Slow Cooker Rotel Chicken Burritos
Every time I make something in the slow cooker I ask myself why I don’t use it more often. Last night was no different. I threw all the ingredients in the pot and several hours later, dinner was done. It’s too easy! On the menu last night was Slow cooker Rotel Chicken Burritos.
I topped the chicken with refried beans, avocado, cheddar cheese, sour cream and hot sauce (of course!).
We really enjoyed it. I loved all the toppings on the chicken.
Slow Cooker Rotel Chicken Burritos (Serves 6)
1 lb. boneless, skinless chicken breasts
1 can Rotel
1/3 cup chicken broth
1 packet taco seasoning
6 large tortillas
toppings of your choice
Please chicken in the slow cooker. Mix Rotel, chicken broth and taco seasoning and pour mixture over chicken. Cook on high for 4 hours. Remove chicken from slow cooker, shred it then add back to slow cooker to blend with remaining sauce. Serve!
The kiddos are off school today and tomorrow for parent teacher conferences. I slept in a bit (yeah!) and didn’t want to eat a big breakfast right before working out so I had a bowl of Cinnamon Toast Crunch cereal.
I went to Cardio Muscle class and then took my son to a birthday party. My daughter and I ran errands and stopped for lunch at McDonald’s. I had my usual grilled chicken McWrap and a salad. I also finished the chicken nuggets she didn’t eat. :)
We picked up my son and came home. Tonight is “hot wing” night at Alicia’s. The scale will not be friendly tomorrow. Oh well.
