144.8…Penne Bolognese-Style

I threw together a super easy meal for dinner last night. I really wasn’t in the mood to cook anything extravagant and this recipe fit the bill. I didn’t even make a salad. Lazy.

Penne Bolognese-Style (Serves 4)

Slightly adapted from Campbell’s Kitchen

Ingredients:

1 pound lean ground beef
1 large onion, minced (about 1 cup)
3 large carrots, shredded (about 2 cups)
1 jar (24 ounces) spaghetti sauce
1/2 cup water
3 tablespoons fresh basil leaves cut into very thin strips
3 cups penne pasta, cooked and drained (about 4 1/2 cups)
2 tablespoons grated Parmesan cheese

Directions:

Cook the beef, onion and carrots in a 12-inch skillet over medium-high heat until the beef is well-browned, stirring often to separate meat.  Pour off any fat.

Stir the sauce and water in the skillet and heat to a boil.  Reduce the heat to low.  Cook for 15 minutes or until the vegetables are tender, stirring occasionally.  Stir in additional water, if needed, until desired consistency.

Place the basil and penne into a large bowl.  Add the beef mixture and toss to coat.  Sprinkle with the cheese.

I took the kids to school then went to the gym for an hour. I’ve spend the day so far attacking my to-do list. Always seems like I’m adding more things than taking off!

Lunch was a turkey & cheddar cheese sandwich, jalapeno kettle chips and an apple.

The rest of the day will be spend taking the kids to all their different events. Sometimes I feel like I live in my car.
