143.4…Cooking Up A Storm

It’s been quite awhile since I’ve spent a weekend at home. This weekend there was no travel, no rushing around….just some soccer games and a ton of cooking!

Friday night I whipped up my son’s favorite meal: P.F. Chang’s Spicy Chicken.

I cannot seem to get it like the restaurant. I can’t get the chicken fried and brown enough. If I fry it too long, the chicken gets tough. Eventually I will figure this out!

Saturday morning’s breakfast was scrambled egg beaters with salsa, turkey and cheddar cheese.

I took the kids to their tennis lesson and then my daughter to her soccer tournament. We were there all day so I brought lunch. Turkey sandwiches and lots of different kinds of chips.

After soccer, the kids went to their friend’s house to play. My husband and I went out to see a movie followed by dinner at Mia Francesca.  We saw “Last Vegas” and it was hilarious!

We split the Caprese salad.

For my entree, I ordered the Linguine with Clams.

Amazing. This restaurant never fails.

Today has been a day of non-stop cooking. I fueled up with some Cinnamon Toast Crunch cereal for breakfast.

I made homemade vanilla bean ice cream for Thanksgiving as well as my “Make Ahead Mashed Potatoes.”

I freeze them and bake them on Thanksgiving Day. Easy! I also made my cookies for the The Great Food Blogger Cookie Swap 2013. I love this….you get 3 other food blogger’s names and you send each of them a dozen homemade cookies. You get three dozen different cookies in return!

My husband picked up Karl Strauss for lunch. I had the Mediterranean salad. I love this salad!

I made all sorts of food that my family cannot eat right away so now I’m going to bake some chocolate chip cookies to make up for it. :)

  1. If you don't have a deep fryer, here is a trick. Heat your oil on the stove. Stick the bottom of a wooden spoon on the bottom of your pan - once you see little bubbles around the spoon - your temperature is perfect - it will sear the outside without overcooking it - just don't crowd the pan too much.

    I can't believe you were home a whole weekend??!!
