144.2…Spinach Fettuccine With Yogurt-Cream Sauce

I love when I find a recipe that tastes like it's bad for me but is actually not! Last night’s dinner turned out to be just that! I’ve had this recipe for Spinach Fettuccine with Yogurt-Cream Sauce sitting around for awhile and finally got around to making it last night. Success!

Spinach Fettuccine with Yogurt-Cream Sauce Serves 4

Ingredients:
  • 8 oz spinach fettuccine
  • Vegetable oil cooking spray
  • 1 teaspoon olive oil
  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 small red bell pepper, cored, seeded and sliced
  • 2 cloves garlic, thinly sliced
  • 1/4 cup nonfat, low-sodium chicken broth
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons reduced-fat Parmesan
  • 1 tablespoon light cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
Cook pasta as directed on package; drain. Set aside. Coat a large skillet with cooking spray. Heat over medium-high heat; add oil. Add zucchini, squash, bell pepper and garlic. Reduce heat to low; cook until pepper begins to soften, 2 to 3 minutes. Add broth; cook until all vegetables are tender, 3 to 4 minutes. Remove from heat; add pasta, yogurt, basil, cheese, cream, salt and pepper. Toss and serve immediately.

I felt like I was eating a delicious cream style pasta and I loved using the spinach fettuccine. Winner! I’m really enjoying cooking with yogurt lately!

Dessert was also a winner.

My breakfast. Teddie peanut butter on a waffle. Yeah, I know. I suck. BUT….I photographed it outside! I thought you’d enjoy a change of scenery since the food doesn’t change.

I took my son to a birthday party and managed to avoid all the pizza and cake. Another success for me! But by the time we got home, I was starving. I reheated some of last night’s dinner and made a big salad to go with it.

Honestly, I’m still hungry. I’m currently drinking water and waiting to see if I’m really hungry or not. If I am, I’ll load up on some fruit.

Tonight we are going out to dinner with some friends to an Italian restaurant. I’ve already looked at the menu online and have a couple of different healthy options in mind. I may splurge on some wine though. I think I deserve it. :)

    Yes, I do check out menus ahead of time whenever possible. :) The best thing I ate this weekend? Zucchini Waffles. Yes, that's 4 times in less than a month. My kids adore them. (That's my story and I'm sticking to it!) Plus, no oil and little sugar makes me feel pretty good about it.

  4. I enjoy looking up menus online, because it gets me excited to go to the restaurant. The best thing I ate this weekend was the seabass we grilled last night and topped with mango avocado salsa. SO.GOOD!
