143.2…Party Success

I survived my weekend of craziness. Everything went off without a hitch and somehow, it all got done. I always stress about this stuff and magically it always seems to come together. 

Thursday night, I didn't feel like cooking anything complicated, so I decided to try this Coconut Curry Indian Simmer Sauce that I got from Costco:

I added chicken to it, defrosted some basmati rice I had the freezer, heated up some frozen peas and thew some frozen Trader Joe's naan in the oven.

Beyond easy dinner. The curry was pretty tasty. Not spicy enough for us but that's easy to fix. 

Breakfast Friday morning was an English muffin with peanut butter and half a grapefruit.

I took the kids to their last day of school (!!) then to my dentist appointment. I came home to get ready for the 3rd grade end of year party which was at my house.  I picked up the kids and came back for the party. The kids swam, ate pizza and said goodbye to one another for the summer. The party was a success and clean up was quick. Good thing because my husband and I had to get ready for an event where we had to be dressed in 80's costumes!

We had a great time…except that the food was a bit sparse. I didn't take any photos because it was dark and there wasn't a ton of places to sit. It was fun seeing everyone's costume choices!

Breakfast Saturday morning was quick: Honey Nut Cheerios and almond milk.

It was time to get ready for party number two. My son is leaving for sleep away camp tomorrow (same as last summer) with some friends. They don't all know each other so I thought it would be nice for their families to come over for a barbecue and swimming so they all can get to know one another. I made chicken tacos, My Favorite Guacamole, Creamy Cole Slaw and Mexican Bean Salad. Basically my favorite menu for a barbecue.

Dessert was Toffee Brownies and Rice Krispy Treats.  I think everyone had a great time…especially the kids who all know each other now!

I spent a bit cleaning up and then we got ready for some more friends to come over for some wine before heading off to dinner. Our friends wanted Indian food and they suggested we go to Ashoka The Great.  Our meal started with vegetable samosa and onion bhaji:

This was followed by lamb curry, tandoori chicken, chicken tikka masala, rice and naan.

The food wasn't very good. :( I would definitely not go back. Boo. 

Sunday morning was lazy around our house. I think we were all recovering from the weekend craziness. We thought about going out to breakfast for Father's Day but the waits were too long. I had some coffee and that was it. 

We went bowling, then off to California Pizza Kitchen for lunch. I had the Italian Chopped Salad which is one of my favorites.

Dinner was where it was at though! Burger Night at our club!! Turkey burger, arugula, red onion, tomato, chipotle aioli and sweet potato fries. Delish!

It felt weird not getting up super early and racing around to get ready to take the kids to school.  Instead, I slept in a bit and enjoyed a cup of coffee before getting ready for the gym. Breakfast was a Honey Roasted Nut Chewy Bar from Cascadian Farm. Great bar!

I went to Cardio Muscle class. Perfect way to start my week.

We met my husband for lunch at PF Chang's (my son's favorite restaurant). I had the lunch special starting with egg drop soup.

I ordered the Ginger Chicken with Broccoli.

I enjoy this but there's really too much sauce for my liking. 

I need to finish getting my son packed for camp tomorrow…he leaves early tomorrow AM!

  1. We hardly ever go out to restaurants on Mother's Day, Father's Day or Valentine's day - its usually overpriced and the restaurants just want to flip tables and its not relaxing at all.

    If I ever come to your neck of the woods, I would love you to take me to your burger night at the club! #sansonions :D
