140.8…Just Say No

It’s Day 8 of my 12 Day Program. How’s it going, you ask? Pretty well….I feel better definitely. It’s just the saying “NO” to all the good stuff that’s hard.

Yesterday morning’s breakfast was scrambled egg beaters with sliced turkey and salsa.

I headed over to Lisa’s house (my daughter spend the night there). We ordered Flippin Pizza for lunch. I just said NO to the pizza and had a chopped salad instead.

Later that afternoon, my daughter and I went to my sister in law’s house. When they offered me wine, I said NO. When they looked at me like I was crazy, I explained the 12 Day Program. They probably still think I’ve lost my mind.

For breakfast this morning I had pineapple Chobani yogurt, Cranberry Pecan Granola and strawberries.

I drove to Los Angeles to visit my mom. Also, tomorrow my son’s bus from camp arrives in Los Angeles. I can’t wait to see him. It’s been two weeks!

We went to the Century City mall. Lunch was the Maui Tuna Crunch Salad (sushi-grade seared tuna, organic greens, toasted almonds, miso vinaigrette) at Seasons 52.

The salad comes with pineapple but since I don’t like fruit with my food, I opted for no pineapple. The dressing was a bit too sweet for me but overall it was ok.

Dessert was cookies & cream frozen yogurt at Pinkberry.

My mom stopped at Tory Burch to get something repaired. They offered me champagne and I said NO. No to free booze?? Who am I!?!

140.6…NSV

Back when I was on Weight Watchers, there was a term know as “NSV” or “Non Scale Victory”. This basically is a term for weight loss success not measured by the scale. I feel like I had a sort-of NSV last night at Lisa’s house. While she was enjoying a cocktail, I enjoyed my own drink:

I took my daughter to the camp bus then headed to the gym for Cardio Muscle class. Lunch was with the girls at Wahoo’s.

I went to see a performance at my daughter’s camp. She’s in theater camp by the way, and loves it!

After camp, we headed back to Lisa’s. I made chicken Caesar salad for dinner.

I had water in a wine glass again. It’s Day 6. I’m half way there.

141.2…The 12 Day Program

So…last Sunday I decided that I needed to clean things up. No…not around my house. I needed to clean up my eating habits. I decided that for the next 12 days (until July 4th), I would eat super healthy and not drink alcohol. For those of you who have fallen over, it’s ok….you can get up now. I’m on day 5 going strong!

Last night’s dinner was a chicken Caesar salad. I actually brought out the stovetop grill and grilled the chicken. Turned out mighty good!

I dropped my daughter off at the camp bus and went to the gym for some treadmill and weights time.

Tonight my daughter and I are going  over to Lisa’s house for dinner. I’m bringing my own salad. :)

142.2…Eat Your Greens

After my extravagant lunch at cooking class yesterday, I felt like a light dinner was in order. As I plated my Amy’s split pea soup and salad, I realized that my food was somewhat matching.

After dropping my daughter off at the camp bus, I went to a meeting at the school (they never end). Lunch was with the girls at Love Boat Sushi. Alicia and I split a bunch of stuff.

142.6…Speedy Summer Entrees

Since we were childless last night, my husband and I decided to go out to dinner at Samurai in Solana Beach. It’s basically a Benihana type restaurant. The meal starts out with miso soup.

Followed by the standard salad with ginger dressing (which I love).

For my entree, I ordered the mahi mahi with steamed rice.

We always get extra onions. :) I didn’t finish all the fish but I made a pretty good dent in it. We had to wait awhile before our food was prepared so they gave us a fried brownie sundae on the house. I did not touch it. I was a bit jealous when my husband proclaimed how good it was.

This morning was extremely leisurely. No kids to get up and dressed. I slept in a bit, got dressed and made some scrambled egg beaters before heading out the door.

Today I had a cooking class at Great News! It’s been awhile since I’ve been to class so I was extra excited. Today’s class was “Speedy Summer Entrees” taught by Phillis Carey.

The first recipe was Indian Spice-Rubbed Grilled Flank Steak with Tangy Garam Masala Sauce:

Holy yum….the sauce was incredible!  Usually I love anything with garam masala in it. The sauce would be great on chicken too!

The second recipe was Pacific Rim Chicken Burgers with Ginger-Lime Mayonnaise.

Another winner! The chicken burgers were basted with a mixture of teriyaki sauce and honey during the grilling. You could make these with ground turkey too.

Next up was Blackened Chicken Breasts with Cajun Tartar Sauce.

The sauce is what made this. The rub on the chicken had a kick to it. The tartar sauce had pimento stuffed olives in it and I didn’t mind it at all. :)

The next recipe was Grilled Halibut with Fresh Pineapple Sambal (Spicy Relish).

I expected not to like this one because of the pineapple. I actually didn’t mind it at all! It wasn’t my favorite dish but the pineapple surprisingly complimented the fish.

Dessert was S’mores Cookie Bars with Marshmallow Crème and Milk Chocolate Filling.

How could this possibly be bad!?! It wasn’t! Seriously….this dessert rocked. You will definitely be seeing this again soon!

Right now I’m blogging away at Starbucks while waiting to pick up my daughter from the camp bus stop.

143.2…Cranberry Pecan Granola

Ever since I ran out of my beloved Coconut-Sour Cherry Granola, I’ve been dying to make more granola. I came across a granola recipe from a friend that I’ve been wanting to try and yesterday turned out to be the perfect day to make it!

Cranberry Pecan Granola

Ingredients:

4 cups rolled oats

1 cup unsalted pecans

1/2 cup maple syrup

1/2 cup canola oil

1/4 cup packed light brown sugar

1 tsp vanilla extract

3/4 cup dried cranberries

Directions:

Preheat oven to 250 degrees. Line a baking sheet with parchment paper. Set it aside.

In a large bowl, mix together the oats and pecans. Set it aside.

Put the maple syrup, brown sugar and oil in a small saucepan. Bring it to a boil over medium heat. Remove the saucepan from the heat and add in the vanilla extract. Stir. 

Pour the hot mixture over the oats and pecans and stir everything together with a spatula. Spread the granola onto the baking sheet lined with parchment paper.

Bake the granola at 250 degrees for 1 hour and 15 minutes. Occasionally stir the granola throughout the baking time.  Once the granola is done baking, put it into a large bowl. Add the dried cranberries and stir them in. Let the granola cool completely then put into an airtight container.

It’s a really good, basic granola! I’m glad to have homemade granola back in the house!

I couldn’t want to eat my new granola this morning for breakfast. I paired it with vanilla Chobani yogurt and mixed berries.

I really enjoyed the granola. I’m not going to lie….I prefer the Coconut-Sour Cherry Granola but this one is still good.

I took my daughter to the camp bus, then hit the gym for Cardio Muscle class. I ran a bunch of errands with Lisa and then we stopped at El Pollo Loco for lunch.

Tonight my daughter is staying over at a friend’s house. With my son at camp and my daughter at a sleep over, it sure is quiet over here!

142.6…My Favorite Guacamole

I’ve been meaning to share My Favorite Guacamole recipe with you. Adjust the spices to your taste. The recipe is a great starting point. I usually end up added more Tabasco. Duh.

My Favorite Guacamole

Recipe from The Barefoot Contessa

Ingredients:

  • 4 ripe Haas avocados
  • 3 tablespoons freshly squeezed lemon juice (1 lemon)
  • 8 dashes hot pepper sauce (I used Tabasco and probably twice this much)
  • 1/2 cup small-diced red onion (1 small onion)
  • 1 large garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 medium tomato, seeded, and small-diced

Directions:

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl.  Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

I spent the day putting all my kids’ school work from the past year into scrapbooks. Yes…I am organized. And anal.

Guess my diet kinda went to the crapper last night. Oh well, it was definitely my cheat meal for the week.

I did some stuff around the house before we all went to lunch at Casa De Bandini in Carlsbad. They had a “healthy items” menu and I ordered the fish burrito from it. The menu said it was 505 calories. I seriously hope that’s true but it’s hard to believe from looking at the plate.

We picked up some stuff at the grocery store to barbeque tonight. It will be the first time turning the barbeque on since last summer!

Oh…I got a letter from my son from camp! It said: Dear Mommy & Daddy…the first day of camp was fun. I love you. Bye.” Short and and to the point. :)
