Las Vegas!

Well, here I am at the airport in Las Vegas waiting for my flight home. How did the weekend fly by so fast!?!

When I arrived at the airport on Friday afternoon, I bought a turkey & cheddar sandwich at Starbucks to hold me over until dinner.

I was all set to get a glass of wine on the plane but they didn’t serve any drinks because of turbulence. Boo!

I made up for lost time when I arrived at my friend Alexis’ room at the Encore hotel. She poured me a glass of wine and I quickly got ready for dinner.

We went to StripSteak (Michael Mina’s restaurant) at the Mandalay Bay Hotel. I had never been and had heard great things. It did not disappoint!

Immediately we were served StripSteak’s famous “Duck Fat Fries”:

Yes, these babies are cooked in duck fat. Holy amazeballs. Genius! There were three different kinds of fries and three different dipping sauces. I could have made a meal of this alone.

Good thing I didn’t because there were so many other delicious things to try! Alexis and I shared their Popper appetizer (ahi, hamachi and ponzu):

This was by far the BEST steak I’ve ever had in my life. The truffle mac n cheese was beyond amazing. Every bite I took made me want to jump for joy.

After such a heavy meal, we decided to head back to our hotel and call it a night. We had a big day the next day!

Yesterday morning I started my day with some yogurt, granola and berries:

After my heavy dinner, I needed something light!

We got ready for the pool and headed down. We met Alexis’ husband and friends at their cabana and spent the whole day there. The weather was hot but perfect. There was a DJ at the pool that played fabulous music. Cameras are not allowed there so I don’t have any photos to share with you. But trust me, it was fun!

I ordered chicken taquitos for lunch and they were served with a ton of guacamole. I was in heaven!!

Eventually it was time to go back to the room and get ready for Alexis’ birthday party. The party was in their hotel suite and she even got a DJ for it.

Down the hatch!

Alexis had a great spread of fun party food: sliders, mini BLT’s, mac n cheese, fries, chicken fingers and fruit. I had a bit of everything. The BLT’s were the best!

By the time people starting heading out to a club it was 1:30AM and Alexis, her husband and I decided to call it a night. It’s tough being old. ;)

I’m glad I got some sleep in last night so I wouldn’t feel destroyed today. ;) I was up at 7:30AM to get ready, packed up and off to the airport. Coffee was extremely necessary. Thank you Starbucks.

I bought a yogurt parfait which I will be eating shortly.

My husband and kids went on their own little trip to Palm Springs and will be back later today. I think I may be able to pull off a nap before they get home! :)

This coming week I will be getting back into all my workout classes. I’m excited! I miss Zumba and my other weights class. I took the past week off after the half marathon and I’m ready to get back into gear! Summer shape up here I come! Except that next weekend we are going on a huge family cruise to Alaska. Must work out on the cruise. Must work out on the cruise!!!!! (Maybe if I say it enough it will happen).

What was the best thing you ate all weekend? StripSteak!!!! Must go back!

Have you ever been on a cruise? Do you like them? I LOVE them!!!!

  1. I should have gone. Rats. But then I probably would have dragged you out to the clubs at 1:30, and you would be "hatin' life" today, so I guess it was best. You guys look like you had a BLAST! Well deserved, my friend!

  2. Looks like you had a great time! I've never been on a cruise but an Alaskan cruise is on the bucket list for SURE! I have that same mantra for my honeymoon "must work out, must work out" lol :-)

  4. you travel so much! Love it -looks like a great time and I now want a filet. But I know it won't be as good as yours! haha

    I've never cruised - I don't know why it doesn't jump out at me but I guess I worry I wouldn't chill enough. haha i'm weird.

    I just got back from Vegas, with my boyfriend. We had SUCH a fabulous time but I am super jealous of those duck fat fries. YUM!
