148.4...Getting My Veggie On
Now that my Spring Break trip is over, it’s time to clean up my eats and focus on eating healthier. One of my favorite things to do is to add veggies to my meals whenever I can. Last night I heated up leftover Turkey Taco Soup that I had had in my freezer. There’s a bunch of veggies in there, plus I added green onions.
To add even more veggies, I made a salad with tomatoes, cucumbers and more green onions.
Breakfast this morning didn’t have veggies but fruit instead. Scrambled egg beaters with sliced avocado and half a grapefruit.
After taking the kids to school, I went to a meeting, then to the gym for Barre Pilates class. Lunch was a big bowl of veggies (along with hard boiled eggs, avocado and Girard’s Light Champagne Dressing) before heading out to an appointment.
How do you add more veggies to your meals?
