145.4...One Thousand Plates of Goodness

When I originally made the Creamy Cheesy Green Chile Chicken Enchiladas, I had a ton of leftovers. I covered the pan with plastic wrap and foil and stuck it in the freezer and hoped for the best. I brought them out on Monday to defrost in the fridge and we had them for dinner Tuesday night. I just threw the pan in the oven at 350 degrees for about 40 minutes.




















I made some Restaurant Style Mexican Rice and refried beans to go with it. The enchiladas reheated really well! 



Wednesday’s breakfast:























After I took the kids to school, I dropped my husband off at his office (he was on his way out of town) and went to the gym for some boring treadmill time.




I rewarded myself with a delicious Grilled Chicken Greek Salad from Marketplace Grill.



















Three times was a charm with last night’s dinner.



















Thursday’s breakfast:





















I took the kids to school, went to an appointment then to the gym for a Sculpt class.

Lunch was Sushiya with Alicia. Miso soup:

Last night I went to dinner at Catania in La Jolla with some friends. We decided to share a bunch of plates. And when I say a bunch, I mean like a thousand.

Citrus Salad (Pistachio, Shallots, Red Wine Vinegar, Castelvetrano Olives, Chili Oil and Parsley):




















I was hesitant to try this because of my aversion for "fruit in my food" but it was quite refreshing and delicious! Glad I  tried it.

Yellowtail Crudo (Beets, Meyer Lemon, Poppy Seeds, Basil and EVOO):



















I love yellowtail so you can't go wrong. This was a different twist on your usual hamachi appetizer and it was great!

Arancini (Saffron Risotto, Fontina, Fresh Mozzarella):




















This was basically a party in your mouth. Wow. So insanely good.

Kale Salad (Treviso, Chickpeas, Celery, Parmesan and Anchovy Vinaigrette):



















Another winner!

Smoked Duck Liver Mousse (Dates, Almond, Shallot and Parsley):



















Wow. Crazy fabulous combination of flavors on perfect toasty bread.

Wild Nettles Pizza (Burrata, Chino Farms' Nettles, Pecorino Toscana, Garlic, Chili Flake and Farm Egg):



















The egg was a bit overcooked but it didn't take away from the deliciousness of this pizza. I think I truly love anything with an egg on it.

Tagliatelle alla Portofino (Genovese Basil Pesto, Creamy Tomato Sauce and Parmesan):



















This may be the best pasta dish I've ever had. There was an agreement at the table because we ordered a SECOND bowl of it. I will dream about this pasta.

Prime Ribeye Steak (Baby Artichoke, Potato and Ribiola Gratin, Crispy Prosciutto, Thyme, Garlic, Fried Sage):



















It was like butter. Amazing.

Whole Roasted Branzino (Fingerling Potatoes, Cipollini, Chino Oranges, Rosemary, Bay Leaf, Salsa Verde):



















I was pretty full at this point so I didn't actually try it. But everyone else seemed to like it!

The restaurant brought us three desserts to try: Semifreddo (Nutella, Hazelnut, Olive Oil and Saba), Chocolate Budino (Red Wine Reduction, Whip Creme, Biscotti) and Pistachio Torta (Mixed Citrus Salad, Olive Oil Sabayon, Dragee Pistachio):



















All were fabulous but the Semifreddo was the best. It was so creamy and perfect. I mean, you can't go wrong with Nutella, right?

Overall, I was very impressed with Catania. I would go back in a second...especially for that pasta dish!

I took the kids to school, went to a meeting, then Zumba at the gym. I met Lisa for lunch at Sammy's Woodfired Pizza. I had the Tomato Basil Soup and Chopped Chicken Salad.



















It's raining outside now and I'm happy to be at home for the rest of the night. Happy Friday!
