I made a winner dinner last night. I had all the ingredients on hand and whipped it up pretty quickly. Crispy Lemon Chicken Pasta is definitely a keeper!
Crispy Lemon Chicken Pasta (Serves 4)
Recipe adapted from Kevin & Amanda
8 oz. spaghetti or angel hair pasta
1 lb. chicken breasts, pounded to about 1/2-inch thickness
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic salt
1/4 cup flour
4 Tbsp butter, divided
3-4 cloves garlic, minced
1 cup heavy whipping cream
2 Tbsp lemon juice (about 1 lemon)
Zest of 1 lemon
1/2 cup grated parmesan cheese
1. Cook pasta according to package directions. Drain and set aside. Season chicken generously on both sides with salt, pepper and garlic salt. Then dredge chicken in flour until coated on all sides.
2. Heat 2 Tbsp butter in a large skillet over medium to medium-high heat. When butter is hot and starts to turn brown, add the chicken and cook 2 minutes on each side. Remove the chicken to a plate.
3. In the same skillet, add the remaining 2 Tbsp butter. When melted and foamy, add the garlic and stir until fragrant, about 30 seconds. Add the cream and bring to a simmer. Add the lemon juice and zest and whisk to combine. Add the parmesan cheese and whisk until smooth and melted. Add the chicken back to the pan and continue cooking until chicken is cooked through. Add salt and pepper to taste.
4. Place the pasta and top with chicken and sauce. Garnish with extra parmesan cheese and parsley if desired.
Dinner on Wednesday night was at Sammy’s Woodfired Pizza. My husband and I split the Chopped Chicken Salad and the Burrata Pesto Pizza.
Such a good meal! Afterwards we went to my son’s basketball game.
After school drop off, I went to Sculpt class at the gym.
Lunch was a Greek Salad with a Chicken Kabob at Luna Grill.
