143.4...Taco Lasagna

It’s no secret that we love Mexican food over here. Here’s an easy recipe for Taco Lasagna with layers and layers of Mexican yummy goodness. Top it with all your favorite taco fixings.

Taco Lasagna (Serves 4-6)

Recipe adapted from Cinnamon Spice & Everything Nice

Ingredients:

Taco Lasagna:

1 lb. ground beef or turkey

1 yellow onion, diced

1 envelope taco seasoning or homemade seasoning mix (recipe to follow)

2/3 cup water

9 corn tortillas

2/3 cup taco sauce or 1 cup salsa

1 (14 oz.) can black beans, drained and rinsed

1 cup corn, thawed if frozen

1 1/2 cups extra sharp cheddar cheese, shredded

Taco fixings like chopped tomatoes, green onions, sour cream, etc.

Taco Seasoning:

1 Tbsp plus 1 tsp. chile powder

1 tsp. paprika

1 tsp. onion powder

1 tsp cornstarch

1/2 tsp. cumin

1/4 tsp. garlic powder

Red pepper to taste

3/4 tsp. kosher salt

1/4 tsp. black pepper

Directions:

1. In a large skillet brown ground beef or turkey with onion, drain grease (if any) and add taco seasoning with 2/3 cup water. Cook over medium-low heat about 5-6 minutes or until most of the water is cooked off.

2. Preheat oven to 400 degrees. Grease a 8x8 deep-sided casserole or baking pan.

3. Add a light layer of the salsa/taco sauce to the bottom of the pan, then double line the bottom with 3-5 tortillas, cutting them up to cover the gaps. Spoon on half of the taco meat in an even layer, drop on half of the taco sauce by spoonfuls, top with half of the beans, half of the corn and 1/2 cup of the cheese. Cover with a single layer of tortillas and layer all ingredients again ending with a top layer of tortillas, sprinkle on remaining cheese.

4. Bake for 20-25 minutes. Let stand for 5 minutes. Serve with taco fixings.

Kids had school off again today. I took them to get their flu shots, then dropped my daughter off at a friend’s house. I took my son to lunch at Leucadia Pizza. I had the Greek Salad with Grilled Shrimp. The dressing is fabulous but they usually have a heavy hand with it so I asked for it on the side.

Tonight is my son’s first flag football game! I will most likely be reheating the Taco Lasagna for a quick dinner before we leave.

Do you ask for salad dressings to be served on the side? I normally like my dressing to be tossed with the salad but there are certain places that overdo it.

  1. The taco lasagna looks so tasty! However it is not one bit authentic mexican. I encourage you to actually go to Mexico and try real Mexican food. You will be blown away at what true, authentic Mexican food is. Recipes such as these put a bad name to Mexican food and add to the ongoing negative thoughts surrounding Mexico and Mexicans. Love your blog though!
