142.6…Nutella Banana Bread

What a productive Sunday! Well, except that I didn’t get out of my pajamas until 2:00PM but that’s ok.

There was breakfast:

Egg Beaters mixed with salsa, light Swiss cheese all on a sandwich thin with some strawberries on the side.

Then something wonderful happened: Nutella Banana Bread.

My kids ate half of it already. It is the best banana bread ever. There was only one problem: the loaf pan specified was too small and it came out of the pan all over my oven. The top got a little burnt and the center wasn’t completely done. That actually turned out to be a little bit of a blessing…the Nutella was a little gooey inside. I ate that piece.

Nutella Banana Bread

1/2 cup unsalted butter

1 1/2 cups sugar

2 eggs

1/4 cup sour cream

1/4 tsp cinnamon

2 cups flour

1/4 tsp baking powder

3/4 tsp baking soda

1/4 tsp salt

3 over-ripe bananas, mashed

3/4 cup Nutella

Preheat oven to 350 degrees. In a medium sized mixing bowl, cream together butter and sugar. Add eggs and sour cream, then cinnamon, flour, baking powder, soda and salt. Next add the bananas.

Place Nutella in a small bowl and microwave for 20 seconds. Stir until smooth. Add one cup of the banana bread batter into the Nutella and mix well.

Place large spoonfuls of batter into a greased 8 x 4 inch (May want to go bigger!) loaf pan, alternating between the banana and Nutella batters. Swirl the two batters together with a knife. Bake 60-65 minutes, or until toothpick inserted into center comes out clean.

 

Lunch was some Madras Lentils, brown rice, Cholula hot sauce and cilantro:

Then I cleaned out my pantry. I took everything out, cleaned the shelves and the floor and reorganized everything.

  3. one word: CHEESECAKE!!!! we brought home a slice of triple decker cheesecake from WF and I'm so excited to eat it with the hubs tomorrow!

  4. Oh man!! This bread sounds fabulous!!! I wish my pantry looked as tidy as yours. Mine is about half that size, so it's always overflowing with junk.

    have you ever made nutella dip? mix fat free cream cheese, nutella, a splash of milk, and splenda, and dip apples and pretzels in it. It's HEAVENLY. :)
