141.6…Use it Up!

While blogging last night, I enjoyed a glass of vino:

We went with another couple and their two kids who are moving in Indianapolis.

I ate some of the chips and salsa and a few of the nachos that my husband ordered. For my entree, I ordered their Pollo Asado tacos which come on whole wheat tortillas. Nice!

Delish!!

Today is a “Use it Up” kind of day. I put the rest of the leftover asparagus into my egg beaters this morning. I also used the last of the cantaloupe:

I took the kids to school and went to Cardio Muscle class. We have a new Friday instructor. After class I had to ask her what she eats for breakfast. I have never seen someone with that much energy in my life. Wow. For those who are curious, she said she eats mini meals with lots of protein plus THREE shots of espresso in her latte each morning. Um, yeah.

Lunch was another “Use it Up” meal.  Last of the mixed greens, cucumber, tomatoes and hummus. I mixed the hummus with balsamic vinegar for my dressing. Best dressing ever. I also had a mini bagel with a Laughing Cow cheese wedge:

I picked up the kids from school and came home to get the laundry started.

Tonight’s dinner is another “Use it Up” meal. Hopefully tomorrow I’ll have some exciting baked good to share! :)

Tomorrow I will meet with my Team in Training group bright and early for the longest run of my life: 4 miles. Watch out 4 miles…I’m coming for you!

  3. I have a use it up day about once a week and everything usually goes into a fritatta. It's never the same twice but always good.

  6. Every time I look at your salad plate with the bagel on it, I can't help but see the Cookie Monster's face! LOL! I try my best to use everything up b4 it goes bad but sometimes little baggies get shoved in the back and I don't find them until they've grown fur. Hate that!
