141.2…No Soup for you!

Congrats to Anne…she was the high bidder for my Toffee Brownies in Steph’s online bake sale yesterday. They just came out of the oven and will be on their way to you shortly (as long as I can keep the hubby’s hands off them!).

My freezer is getting ridiculously full. As I mentioned before, I freeze everything. I hate to waste food so all leftovers go in there. I’ve decided that at least once a week, I need to use leftovers in the freezer. Last night’s dinner was just that. Leftover Lightened Bolognese.

I will have to make this sauce again. It really is incredible. I served it over whole wheat penne and sautéed spinach.

Dessert was a bowl of Chocolate Cheerios with almond milk….eaten in my bed. Shhh…don’t tell my kids.

Egg beater & salsa burrito was on the menu for breakfast this morning. I had a bowl of cantaloupe to go with it.

After the kids were dropped off at school, I went to Great News for a cooking class. Today’s class was entitled "Hearty Winter Soups”. I guess we aren’t having much winter over here in San Diego but the rest of you are so we’re just going to roll with it. :)

The first recipe was Italian Wedding Soup with Tiny Chicken Meatballs, Pasta Stars and Spinach:

I liked everything about this soup. The chicken meatballs were fabulous and I loved the little pasta stars.

The second recipe was Chicken, Portabello and Wild Rice Soup with Buttermilk Cheddar Biscuits:

The soup was also delicious and I loved the biscuits!

The third recipe was Southwestern Corn and Potato Soup topped with Shrimp, Salsa and Lime:

So good! Loved the extra lime to squeeze on top. The shrimp was a great addition.

The last soup recipe was Manhattan Clam Chowder with Tomatoes and Potatoes:

This was also good but I prefer the New England variety of clam chowder better.

Dessert was Pear Spice Cake with Lemon Honey Cream Cheese Frosting:

Holy yummy deliciousness! Moist cake and the always fabulous cream cheese frosting. How could you go wrong?

  4. I've always wanted to go to a cooking class! Sounds so fun! Did they send recipes home with you? The soups all sound delish, but like you, I prefer New England clam chowder. I think I'm going to have to make myself a pear spice cake now! ~Veronica
