141.2…Holy Guacamole!

I love guacamole. I especially love the guacamole I make. I brought it to my friend’s house to watch the Super Bowl yesterday.

Don’t worry….I will share my guacamole recipe with you because I’m nice like that. But you’ll have to wait until the end of this post. Think you can do that? Good.

I also brought my favorite slow cooker taco dip:

Alicia’s husband barbecued some carne asada. I was extra bad….I topped my carne asada with hot sauce, guacamole AND taco dip:

There were only four of us but by the looks of our spread you would have thought many more were coming.

Nope, it was just the four of us. We like to eat. I love hanging out with people who like to eat….I don’t feel like such a freak. :)

The Better than Crack Brownies were a big hit by the way. Dangerous little things.

This morning I grabbed a quick breakfast of Cinnamon Burst Cheerios with almond milk and an orange:

I went to the gym to bust out my half marathon training for the day: 3 miles. I haven’t run on the treadmill in a long time so I thought I’d give it a shot. Plus I only had a certain amount of time before my Cardio Muscle class started. It was tough doing the run and the class back to back. I may have to split them up next time like I did last week.

When I got home, I ate a few dates before changing.

After a bit, I made lunch:

Whole wheat tortilla with leftover guacamole, turkey slices, broccoli slaw and lettuce. I had some grapes on the side. What a fabulous wrap! Have I mentioned that I love guacamole?

I also love my Better than Crack Brownies so I had a small piece:

Let’s get back to the guacamole shall we? This is my favorite guacamole recipe….it’s always a hit!

My Favorite Guacamole

Recipe from The Barefoot Contessa

Ingredients

  • 4 ripe Haas avocados
  • 3 tablespoons freshly squeezed lemon juice (1 lemon)
  • 8 dashes hot pepper sauce (I used Tabasco and probably twice this much)
  • 1/2 cup small-diced red onion (1 small onion)
  • 1 large garlic clove, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 medium tomato, seeded, and small-diced

Directions

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. (I use my hands.) Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

  2. I love guac, but it's only been in the past year. I mean just by the looks of it I never wanted to eat it in the past. But my mom finally talked me in to it and now I love it!
    I made pizza bites yesterday for the Superbowl and they were great!

    I added a bunch of fresh blueberries on top. Holy mouth love...so good. A bit random for a Superbowl party but I follow my cravings. I'm a bit jealous that you've gotten to taste THE BROWNIES though. I saw those on Howsweet a bit ago and I keep forgetting to try to make them. But my pants still fit, so I guess it's a trade off :)

  9. I WILL BE MAKING THAT GUAC!!! Oh, and hot wings....delicious. I should have come to your superbowl party! I made box-brownies....not nearly as good as yours. We should watch the bachelor and skype at the same time and discuss how crazy Michelle is!

  10. That's a great recipe for guac! I tried to make it for my taco night last week but the avaocados at the store were hard, booo. I just stole the recipe for better than crack brownies. They look AWESOME!

  13. You're making me hungry and it's almost bedtime. I've used all my calories for the day! Phooey. I luuurve guac and your recipe sounds just like my favorite, which is what my Mom makes and I've never been able to duplicate. She doesn't use a recipe and I always get the measurements wrong so I'll try yours next time.
