141.0…Getting comfortable.

Hubby had to work late last night so I was left to my own devices.

Just looking at the cool, crisp wine is making me want a glass. But really…what DOESN’T make me want wine?

I looked in the fridge to see what I could throw together for dinner. I had some leftover chicken and lemony leek sauce from the other night’s Great News Recipe of the Week. That sauce was so amazing…it would be great…on pasta!

I sautéed some cherry tomatoes and leftover broccoli, mixed it with the lemony leek sauce and added it to some fettuccini. I heated up some of the almond crusted chicken, cut it into bite size pieces and added  that to the mix. With some black pepper and red pepper flakes….dinner was fast and DELICIOUS.

Breakfast was another one of my burrito combinations: egg beaters, a little refried beans and salsa on a wheat tortilla. I had more strawberries as well.

I took the kids to school and then to Starbucks for a tea and to read blogs.

Then it was time to head over to Great News for a cooking class. Today’s class was perfect for the rainy weather: Do-Ahead Comfort Food. I love comfort food. I like to be comfortable. Who doesn’t!?!

Let me sing the praises of the first recipe: Ultimate Mac and Cheese with Bacon:

Can you hear me singing?? Holy yum! This was ultimate. This was simply just cheesy goodness.

The second recipe was Creole Shrimp and Corn Chowder:

Another winner. Loved the kick of the Old Bay seasoning and the sweetness of the corn and shrimp.

The next recipe was Pork Osso Bucco with Parmesan Polenta:

The pork was falling apart and so tender. The sauce really complemented the parmesan polenta.

Next up was Old Fashioned Chicken Pot Pie with Individual Puff Pastry Crust:

I really didn’t think I’d like this one. You know I don’t like fruit with my food. Boy was I surprised when this one knocked my socks off! It was served on fresh pasta which absorbed the fabulous sauce perfectly. Winner winner, chicken dinner.

Dessert: Chocolate Cake with Caramel Filling and Fudge Frosting Topped with Salted Pecans:

Oh my….this was a goodie. VERY rich though. Even I couldn’t finish it. But maybe that had nothing to do with the richness of the chocolate…it could have been the 5 other plates of food I had prior.

I dragged my body out of the comfort zone of the class to go pick up the kids from school.

Tomorrow morning I met with Team in Training for another 5 mile run. There’s a 90% chance of rain and I was told to bring a huge trash bag with holes for my head and arms to run in. Should be interesting.

Afterwards we are planning on heading to Palm Springs with the kids. When we booked the trip, it was supposed to be sunny and warm-ish. Hmmm. Not looking that way. Hopefully I’ll be able to blog while I’m there!

If you could have only ONE cookbook, which one would it be?

  2. Hmmm, one cookbook. That is a tough one, I get most of my recipes online now. I think one of my favourite books is one of those books that schools sell after they collect recipes from parents :)

  4. I'm impressed with the meal you made out of the leftovers! It looks like a whole new gourmet dinner.
    I don't use cookbooks as much anymore. I find most recipes in Cooking Light or online (blogs.)

  6. OK, found the post mentioning your vaca! I think I read the beginning of this and then had to leave and forgot to finish. Since I'm a dessert hound, if I had known that would be last I would have not eaten anything else and just finished it off! Looks soooo good.
