143.4…Quick BBQ Chicken Pizza
We are big pizza fans over here. I don't think we could ever get tired of it.
One of my husband's favorite pizzas is Barbecue Chicken Pizza. I do have to admit that it's not my favorite but this recipe was less on the barbecue side so I think it worked for both of us!
Quick BBQ Chicken Pizza (Serves 3-4)
Recipe adapted from Cooking Light, March 2014
1 Tbsp olive oil
3/4 cup chopped red onion
1 1/2 cups shredded skinless, boneless rotisserie chicken breast
1/4 cup chicken stock
1/4 cup marinara sauce
1/4 cup barbecue sauce
1 store bought pizza dough
1 cup shredded mozzarella cheese
1/3 cup chopped green onions
1/2 tsp. freshly ground black pepper
1. Preheat oven to the temperature indicated on pizza dough. Roll out dough.
2. Heat olive oil in a saucepan over medium heat. Add onion; sauté 2 minutes or until translucent. Stir in chicken, stock, marinara and barbecue sauce; cook 3 minutes or until thoroughly heated. Remove pan from heat.
3. Spread chicken mixture over crust. Top with mozzarella cheese. Place pizzas on chosen baking pan/stone. Bake according to dough directions. Top with green onions and pepper.
The pizza tasted great with a simple salad tossed with ranch dressing.
Breakfast this morning was pineapple Chobani yogurt, Applesauce Granola, strawberries and raspberries.
After I took the kids to school I went to spin class. We did some upper body work too. Between yesterday's class and today, I won't be able to move tomorrow.
I ran a bunch of errands, stopping at Jersey Mike's for lunch.
Turkey and provolone, Mike's Way. It's been WAY too long since I've had this deliciousness!
