143.0…Soft Batch Style Chocolate Chip Cookies
When it comes to cookies, I prefer mine on the softer side. This is especially true for chocolate chip cookies.
When I saw this recipe for Soft Batch Style Chocolate Chip Cookies, I knew I had to try it. I'm glad I did. It's a winner in the soft cookie category.
Soft Batch Style Chocolate Chip Cookies (Makes 2 dozen cookies)
Recipe from Picky Palate
1 stick (1/2 cup) unsalted butter
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1/2 tsp. pure vanilla extract
1 1/2 cups all-purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. kosher salt
2 cups semi-sweet chocolate chips
1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
2. Cream the butter and sugars in a stand mixer until light and fluffy, about 2 minutes. Add the egg, then the vanilla, beating to combine. Add flour, cornstarch, baking soda, salt, mixing until combined. Add the chocolate chips and mix until just combined.
3. With cookie scoop, scoop dough onto prepared cookie sheet. Press dough down to flatten slightly. Bake for 10-12 minutes until baked through. 10 minutes will be softer cookies, 12 minutes will be browned. Let cool for 10 minutes on baking sheet before transferring to cooling rack.
Note: I baked mine for 10 minutes.
This recipe has now become my favorite chocolate chip cookie recipe! I brought them over to Alicia's house last night where we ate dinner. We ordered pizza from Flippin Pizza. The kids had cheese pizza and there was a pizza with onions, peppers and mushrooms. But I focused on the best pizza of all!
Pepperoni! It was an exceptionally good pepperoni pizza! We also ordered the Buffalo Caesar salad. It was good but the chicken wasn't buffalo-y enough.
I went back for a second slice. Totally worth it.
Breakfast this morning was scrambled egg beaters, chicken sausage, asparagus, salsa and cheddar cheese.
After I took the kids to school, I went to Cardio Muscle class. I hadn't been to that class in a couple of weeks. I'm sore when I do go every week. I'll be lucky if I can walk tomorrow. Note to self: do not miss that class again.
I ran some errands and then went to my last photography class. At the class I had a salad with tuna and jalapeño vinaigrette.
I feel a bit more comfortable with my SLR camera but it's still confusing. At least I know what all the buttons mean now! I'm sure with practice, I'll figure this out.
