140.8…Monster Cookies

You feel like a cookie. But you're not sure what kind.

Chocolate chip? Oatmeal? Peanut Butter? M&M's? Why choose!?! Combine them all for one delicious Monster Cookie.

Monster Cookies (Makes 3 dozen)

Recipe slightly adapted from Paula Deen

Ingredients:

3 eggs

1 1/4 cups packed light brown sugar

1 cup granulated sugar

1/2 tsp. salt

1/2 tsp. vanilla extract

1 12 oz. jar creamy peanut butter

1 stick butter, softened

1 cup M&M's

1 cup chocolate chips

2 tsp. baking soda

4 1/2 cups quick-cooking oatmeal (not instant)

Directions:

1. Preheat the oven to 350 degrees. Line cookie sheets with parchment paper or nonstick baking mats.

2. In a very large mixing bowl, combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter, and butter. Mix well. Stir in the M&M's, chocolate chips, baking soda and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.

3. Bake for 8 to 10 minutes. Do not over bake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.

You can add raisins if you want but I decided to leave those out. 

Last night I went with my husband to an event at the La Jolla Beach & Tennis Club. We enjoyed a delicious buffet out on the sand overlooking the sunset.

I had a slice of delicious chocolate cake but it was too dark and the photo didn't come out. 

This morning I slept in a bit and enjoyed some Lucky Charms cereal while watching TV. It was heaven.

We all went to Tio Leo's for lunch. I had two soft beef tacos with beans and rice.

We went to my son's basketball game (they lost). :( We came home and I got the baking bug so I baked the Monster Cookies. 

Now both kids have play dates over. They are eating pizza while my husband went to go pick up barbecue for us. Excited! 

Any Mother's Day plans?
