145.0...Epic Food, Boring Oscars

On Saturday we attended our school’s special gala to celebrate the 36th anniversary of the school. Before I went out, I snacked on some almonds so I wouldn’t be starving at the party.

The event was held in a private hanger at Montgomery Field. The space turned out spectacular!

The evening started with cocktails and appetizers. We brought our friends Yamia and Asaf along for the night.

We sat down for dinner and the presentation. The tables were beautiful!

Followed by the main course, in which I chose the fish.

Dessert were little individual desserts at the table but I didn’t have any….I was too busy dancing. There was a great band and we danced the night away! Great event benefiting our school!

Sunday’s breakfast:

My daughter went to a birthday party. After I picked her up, I took her to lunch at Red Robin. I ordered their cobb salad (minus the blue cheese) with lite ranch dressing on the side.

Last night we went over to Alicia’s for hot wings and to watch the Oscars with some friends. I brought the salad:

I thought the Oscars were boring….maybe it’s because I haven’t seen most of the movies? ;)

After I took the kids to school, I went to Hardline class at the gym. That was followed by running errands, an appointment and lunch at Subway.

Turkey avocado on wheat. I was impressed with the neatness of my sandwich today.

Tonight I need to pick up my son from basketball and that’s it. Simple.

143.4...Chicken Breasts in Caper-Cream Sauce

It had been awhile since I’ve made a new recipe but it was worth the wait on Thursday night. Chicken Breasts in Caper-Cream Sauce was a huge it in our house! I doubled the sauce in the original recipe and I’m so glad I did. You will thank me!

Chicken Breasts in Caper-Cream Sauce (Serves 4)

Recipe adapted from All Recipes


4 (6 ounce) boneless, skinless chicken breasts, pounded to 1/2-inch thickness 

1 tsp. lemon pepper

1 tsp. salt

1 tsp. dried dill weed

1 tsp. garlic powder

3 Tbsp butter

1 cup whipping cream

2 Tbsp capers, drained and rinsed


1. Sprinkle chicken with lemon pepper, salt, dill, and garlic powder.

2. Melt butter in a large skillet (not non-stick) over medium heat. Put chicken in skillet and brown, about 2 minutes per side. Transfer chicken to a plate.

3. Add whipping cream and simmer, whisking constantly, until reduced to sauce consistency, about 3-5 minutes. Stir in capers and return chicken to skillet. Continue cooking until chicken is cooked through. Taste for salt and pepper.

I met some friends for breakfast at Snooze on Thursday morning after I took the kids to school. I ordered an egg white omelet with cheddar cheese, spinach and caramelized onions. On the side: sliced tomatoes and  wheat toast. It was fantastic.

I went to an appointment, then the gym for some boring treadmill time since I had missed my Sculpt class.

Since I ate a later breakfast, I wasn’t super hungry for lunch. I found half a bag of trail mix in my pantry so that was lunch.

Dinner really was epic. The Chicken Breasts in Caper-Cream Sauce went perfectly with some frozen rice that I found in the freezer. I also served some carrots with it. Perfect dinner.

After I took the kids to school I went to my dentist appointment, then to the gym for Zumba class.

I picked up the kids from school, got them ready then took them to cotillion. In between each of theirs, we went to Rancho Santa Fe Bistro for dinner. I haven’t had any lunch at this place but came upon a salad I really liked last night:

 Quinoa, Chicken & Avocado Salad (mixed spring greens, quinoa, carrots, tomato, avocado, & house vinaigrette). I would order it again!

It’s been a wonderful, lazy morning over here and I’m thoroughly enjoying it! Happy Saturday!

144.0...A New Lunch Spot

So I’ve had this cold for a few days and my energy levels are depleted. Last night my husband was working late so I knew I wanted to make salmon for dinner. I didn’t want to make anything complicated so I just put garlic salt, lemon pepper and lemon slices on the salmon and baked it.

It blows my mind how something so simple can taste so good.

Breakfast this morning:

I took the kids to school and went to spin class. I went to a couple of appointments and ran some errands. 

There’s this salad place near me that I had been meaning to try for awhile and decided that today was the day. The Green Spot Salad Company it was for lunch! Turns out that they have much more than salads. There were wraps, potatoes, soups and bowls. The Seared Ahi Ginger Sesame Bowl caught my eye so that’s what I went with.

It was pretty good! Besides seared ahi, there was brown rice, broccoli, carrots, mushrooms and a ginger sesame sauce. I’m definitely going to go back again! 

I did the usual school pick-ups this afternoon. My husband is working late again so I reheated some of my sister in law’s delicious spicy turkey chili that I had in the freezer.

144.0...Flavors of Italy

Last night it was all about digging around in my freezer for dinner. I came up with Trader Joe’s Four Cheese Ravioli. I had some frozen marinara as well so that became dinner.

Breakfast this morning:

After I took the kids to school I went to Cardio Strength class at the gym. Then it was off to a cooking class at the La Jolla Community Center taught by Phillis Carey. The class was titled “Flavors of Italy.” The first recipe was Risotto Primavera with Prosciutto, Asparagus, Leeks and Fresh Peas:

This was so fresh, creamy and delicious! Loved it!

The next recipe was Baked Italian Chicken Rolls with Prosciutto, Fontina and Basil Ricotta Filling:

The chicken rolls were served on top of marinara and with a side of garlic spinach. I loved this too! The chicken was so good!

The third recipe was Shrimp and Spinach Lasagna with Creamy Tomato Sauce:

This sauce was so amazing. It would be great on pasta just by itself. 

Dessert was Espresso Panna Cotta with Dark Chocolate Sauce:

Fabulous. It was a little cup of heaven. Another awesome Phillis Carey class!

145.8...Epic Adventures in Cabo

All I can say is Wow. I had the most incredible time in Cabo San Lucas this past weekend. The weather was perfect, the company was a blast and the food rocked. I really meant to blog while I was there but I was having too much fun honestly. It was my husband’s company’s annual trip to Cabo and it never disappoints. 

Tuesday night before we left I made pasta for dinner. I was trying to get packed and there wasn’t a ton of options in the house, so it seemed like the obvious and easy choice.

Wednesday morning we were up bright and early to get ready and get out the door. Breakfast was my usual favorite.

We arrived at the airport and waited for the rest of the group. Everyone arrived and we had some drinks and food before boarding the plane. I split a breakfast burrito with my friend Melanie.

We landed and jumped into the cab and headed towards our house in Pedregal.

When we arrived, we were greeted with delicious snacks.

We put our bathing suits on and enjoyed what was left of the beautiful day by the pool.

Dinner Wednesday night was at the house. We had chicken and shrimp fajitas with all the fixings.

The rest of the evening was spent playing ping pong and hanging by the fire pit by the pool.

Breakfasts were actually my favorite meals at the house. Thursday’s breakfast was chilaquiles, eggs, bacon and potatoes.

Then we had the rough job of laying by the beautiful pool all day.

It was a bit more like flan, so I did not partake. In case you forgot, I cannot stand flan.

Dinner Thursday night was especially awesome. We made the hour drive to Flora Farms Restaurant. It’s too bad it was dark when we arrived because the property was gorgeous. The pictures at night were not doing it justice. Flora Farms is a ten acre organic farm in the foothills of the Sierra de la Laguna Mountains in Cabo. Getting there is an adventure all by itself. 

It also just so happened to be Steve’s birthday!

After dinner we drove back into town and went to Mandala Nightclub for some dancing!

Breakfast Friday was an veggie omelet complete with my favorite beans.

We spent the morning and early afternoon by the pool.

After lunch, we headed to the marina for our late afternoon yachting adventure aboard the Contessa.

The day was so perfect….we saw a few whales along the way too!

Dinner was at one of my favorite restaurants in Cabo, Edith’s. The meal always starts with their complementary tostada:

The table also shared a myriad of delicious appetizers:

You have to order the Caesar salad when you are at Edith’s. It is prepared table side and it is fabulous.

After all that, I wasn’t super hungry so I opted for the lobster bisque.

Yes, there is lobster bisque hidden in the bread bowl. It was really good!

After dinner, it was back to Mandala Nightclub for more dancing. We stayed out way later that I’m normally used to but every minute of it was a blast!

Breakfast on Saturday was huevos rancheros.

It’s exactly what the doctor ordered when you’ve been out super late the night before. ;)

Saturday was a lazy day by the pool. At lunch we had sangria. Such a beautiful presentation!

Our meal started with a salad with honey mustard dressing. It was too sweet for me but everyone else inhaled it.

We enjoyed some carne asada, rice, beans and mashed potatoes. The carne asada was unreal.

Saturday night was our final dinner of the trip. It started off with a creamed corn soup that was so amazing.

The main event was “surf and turf”: filet wrapped with bacon, shrimp, veggies and the cutest presentation of a baked potato I’ve ever seen:

After dinner we went out for a bit. We started at The Nowhere Bar.

After that, we went to El Squid Roe (a favorite stomping ground of mine during college spring break) for a bit before heading home.

Our last meal at the house was Sunday’s breakfast. Chilaquiles, eggs and my beans:

We packed up and sadly headed to the airport. We had our standard fare at the airport for lunch: Carls Jr.

Since cooking wasn’t going to happen last night, we went to Firenze for dinner. My husband and I split the Chopped Caesar salad.

I’ll admit it, getting up at 5:45am this morning was rough. Lol. I was looking forward to my breakfast though!

I took the kids to school, then to the gym for Hardline class. I’m proud of myself that I worked out. I definitely was not feeling like it.

Lunch was a turkey and avocado sandwich from Subway.
