146.8...Pasta with Tomato Cream Sauce

It rained all day Sunday. All day. Some comfort food was in order for sure. We invited Alicia and her family over for dinner. I made Pasta with Tomato Cream Sauce, garlic bread and Caesar salad. Oh and don’t forget the Chewy Chocolate Chip Heath Bar Cookies

The Pasta with Tomato Cream Sauce was super simple to make and full of flavor!

Pasta with Tomato Cream Sauce (Serves 8)

Recipe from The Pioneer Woman

Ingredients:

2 Tbsp olive oil

2 Tbsp butter

1 whole medium onion, finely diced

4 cloves garlic, minced

2 cans (15 oz. each) tomato sauce or marinara sauce

Salt and pepper, to taste

Dash of sugar (more to taste)

1 cup heavy cream

Grated Parmesan or Romano cheese, to taste

Fresh Basil, chopped

1 1/2 pound fettuccine 

Directions:

1. Cook pasta according to package directions. Drain, reserving 1 cup of pasta water.

2. Heat butter and oil over medium heat. Add onions and garlic and sauté for a minute or so. Pour in tomato sauce and add salt, pepper, and sugar to taste. Stir and cook over low heat for 25 to 30 minutes, stirring occasionally.

3. Remove from heat and stir in cream. add cheese to taste, then check seasonings. Stir in pasta and chopped basil and serve immediately. (Thin with pasta water before adding basil if needed.)

For the garlic bread, I bought a loaf of garlic bread (it had whole cloves of garlic in it!), cut in in half and put a garlic spread that I had bought at the store on each half. I baked it at 350 degrees for about 15 minutes.

Yep. It was so good, I took a bite before I snapped the picture. The garlic bread was also good dipped in the tomato cream sauce. Just saying.

I clearly did a lot of damage this past weekend so the gym was in order after I took the kids to school. I went to Hardline class…45 minutes of weights and some cardio.

Lunch was a turkey sandwich, veggies and ranch dressing in between a couple of appointments.

For dinner last night, I made Creamy Cheesy Green Chile Chicken Enchiladas, Restaurant Style Mexican Rice (recipes coming) and refried beans.

I just finished up Cardio Strength class at the gym and now I’m headed to a cooking class. Happy Tuesday!
