143.4...Caesar Dressing

Last night we went over to Alicia’s for pizza. I brought over a Caesar salad and decided to make my own Caesar dressing. It turned out fabulous and was a snap to make! Homemade dressings are so much better than the store bought stuff!

Caesar Dressing (Serves 4-6)

Recipe from Ina Garten

 Ingredients:

1 large garlic clove, chopped

2 Tbsp. chopped fresh flat-leaf parsley

1 1/2 tsp. anchovy paste

1 tsp. Dijon mustard

1 1/2 Tbsp. freshly squeezed lemon juice

1/2 cup mayonnaise

Directions:

1. Place the garlic and parsley in the bowl of a food processor fitted with a steel blade and process until minced. Add the anchovy paste, mustard, lemon juice, and mayonnaise and process again to make a smooth dressing.

Excellent Friday night dinner!

Breakfast this morning was the usual. Still loving it.

I spent most of the day getting my kids packed for sleep away camp. They leave soon for two weeks. It’s amazing how long it takes to gather everything and label every.single.item.

We went to one of my son’s favorite restaurants, Pei Wei, for lunch. I had the kids steamed honey seared shrimp with brown rice and veggies.

Tonight we are going to Alicia’s again. They are hosting our neighborhood’s “Couples Mixer”. There are about 25 couples in the group and every quarter a different person hosts the event at their home. Each guest brings a hearty appetizer and a bottle of wine.
