144.8...Souperior Meatloaf

One of my favorite meals growing up was my mom’s meatloaf. Of course my brother didn’t like it because we couldn’t agree on anything. Except Denny’s. We both liked going to Denny’s. Go figure. Funny thing is that it’s just the recipe on the back of the Lipton Onion Soup Mix box.  Anytime my mom would announce that we were having meatloaf for dinner, I would jump up and down while listening to my brother’s groans of despair. 

Last night I had the immense desire to relive those memories so I whipped up my mom’s meatloaf. I smiled with each bite. I think I could hear my brother groan somewhere….

Souperior Meatloaf (Serves 8)

Recipe courtesy Lipton Onion Soup Mix

Ingredients:

1 (1 ounce) envelope Lipton Onion Soup Mix (I actually use two envelopes!)

2 lbs. ground beef

3/4 cup dry breadcrumbs

2 eggs

3/4 cup water

1/3 cup ketchup

Directions:

1. Preheat oven to 350 degrees.

2. Combine all ingredients together in a large bowl. Shape mixture into a loaf on a cookie sheet or 13x9 pan.

3. Bake uncovered 1 hour. Let stand 10 minutes before serving.

Lunch yesterday was tuna salad and celery sticks.

This morning’s breakfast was a toasted English muffin with peanut butter.

This morning I went to a meeting at the school, followed by parent teacher conferences. I ran some errands and stopped at Wahoo’s for lunch. I had two “skinny” fish tacos. Old school lunch!

What was your favorite meal that your mom or dad made when you were younger?

  1. My Mom used to make open face white bread sandwiches with cooked bacon and melted mozzarella cheese - I am confident she made that because that's all she had in the house, I don't remember it being served with a veggie or fruit or anything - but it was so good!

    My mom used to make something similar but it was cheddar cheese melted over bacon and tomato slices on white toasted bread! Yum!
