144.8...Crockpot Chicken Tacos

Looking for the easiest slow cooker recipe ever? I have it for you: Crockpot Chicken Tacos! It doesn’t get any easier (or delicious) than this!

Crockpot Chicken Tacos (Serves 12)

Recipe from Tasty Kitchen

Ingredients:

1 (1 oz.) envelope taco seasoning or my Homemade Taco Seasoning

6 boneless, skinless chicken breasts, thawed

1 16oz. jar salsa

Directions:

1. Dump all ingredients into a crockpot and give it a little stir to blend the seasoning with the salsa. You do not need to add any water to the taco seasoning.

2. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.

For tacos, serve the chicken with soft flour tortillas, guacamole, lettuce, shredded cheese and/or sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, quesadillas, etc. 

When I don’t want quite as much food, I cut the recipe in half. You don’t have to get too exact about the measurements. I used 4 chicken breasts this time and used 3/4 of the amount of salsa but still used the full taco seasoning recipe.

I took my daughter to lunch yesterday (my son was out with my husband) to Karl Strauss. I ordered the Ginger Crusted Salmon (sautéed rainbow chard, steamed broccoli, avocado, and firecracker sauce):

It was just ok. The salmon was a bit overcooked for me and the sauce was a bit too sweet. I liked all the veggies though!

Last night, I decided to use the Crockpot Chicken Taco chicken leftovers to make enchiladas!

I served the Chicken Enchiladas with leftover Easy Mexican Rice (recipe coming).

The kiddos don’t have school today so I was able to sleep in a bit. This was a good thing since the time change has left me waking up in the dark now. I cannot stand the time changes. Can’t we just pick one and stick with it!?!

Breakfast was Honey Nut Cheerios and almond milk.

I went to Cardio Muscle class and got a great workout in! 

Lunch was tuna salad, veggies and ranch dressing.

Today will be spent getting stuff done around the house. Tonight I’m going over to Lisa’s house for a “Bachelor Finale” party!
