142.8…Rosemary White Bean Spread

I have so many delicious eats to share with you!! The weekend was full of them! We celebrated my son's birthday on Saturday with some family and friends. I made a few easy dips for everyone. The first one I'm going to share with you was the Rosemary White Bean Spread. It's similar to hummus but with a kicked up flavor, in my opinion.

Rosemary White Bean Spread (Makes 2 cups)

Recipe from Diane Phillips 

Ingredients:

Two 19-ounce cans cannellini beans or small white beans, drained and rinsed

1/4 cup extra virgin olive oil, plus extra for drizzling

2 Tbsp red wine vinegar

2 Tbsp fresh rosemary leaves

2 tsp. salt

1 1/2 tsp. freshly ground black pepper

1/3 cup chopped fresh parsley 

Directions: 

1. In a food processor, combine the beans, oil, vinegar, rosemary, salt, and pepper and process until smooth. 

*Do Ahead: At this point, cover and refrigerate for at least 2 hours and up to 3 days to let the flavors develop. Bring to room temperature before serving.

2. When you are ready to serve, stir the dip, drizzle with extra virgin olive oil, ad sprinkle with parsley.

Friday night we went out to dinner at Mia Francesca. That makes twice in one week. I'm not complaining.

Our table shared a few things, including Bruschette, Calarami and Caprese salad.

For my entree, I ordered the Penne all Carrettiera (sautéed with ham, peas, wild mushrooms in a tomato cream sauce).

It was an amazing bowl of pasta. I didn't want to seem piggish and eat the whole thing so I left a couple of bites. :)

Dessert was a repeat of Monday. It was too good not to repeat.

Stracciatella di Pizze (warm chocolate chip pizza with vanilla gelato and chocolate sauce).

Breakfast Saturday morning before the party was a quick Special K Flatbread Breakfast Sandwich.

We headed off for the party. Party was a success with me managing to only eat one slice of pizza. I knew I had delicious dips awaiting me at home. Besides the Rosemary White Bean Spread, I also made Fresh Herb Ranch Dip:

Later that night, we attended a large dinner party at a friend's house. There were a bunch of yummy passed appetizers that I indulged in. Dinner was fabulous as well...

There was a buffet of sea bass, white beans with kale (my favorite), steak skewers and sautéed vegetables. 

There was a beautiful dessert table with all sorts of different sweets. I enjoyed some chocolate covered popcorn and chocolate covered corn flakes (my favorite).

Sunday morning started out with a toasted English muffin and half a grapefruit.

We hung around the house for the morning. My mom was visiting so we took her to our club for lunch. I ordered the Chopped Salad with was fabulous!

After lunch, my mom headed back to Palm Desert and I got ready for our next event: our friends, Tim & Michelle's wedding!

The wedding was held at the New Children's Museum in downtown San Diego. The ceremony was outside on the grass across the street from the museum. After the ceremony, it was cocktail hour on the museum's outdoor patio.

I was able to catch up with some of the ladies from our recent Cabo trip.

After cocktail hour, we were seated for dinner.

Dinner was served buffet style at several different stations: Mixed Berry & Goat Cheese Salad; Roasted Filet Mignon Carving Station; Marinated Grilled Vegetables; Macaroni and Cheese Bar (Hello!?! YUM!); Seared Ahi.

After some dancing, it was time to hit the Donut & Cookie Bar! Say what!?!

The donuts were in lieu of a wedding cake and I personally enjoyed it greatly. :) 

We really enjoyed ourselves at Tim & Michelle's wedding. I love all the detail and love they put into everything and it was fun catching up with friends!

This week my kids are on Spring Break. They are not the only ones who are excited. I am! No early, crazy mornings this week. No homework or running around to their different events. No PTO meetings. Nothing. Ahhhhhhhh.

Breakfast was Honey Nut Cheerios with almond milk.

I went to Cardio Muscle class then came home to take the kiddos to hair cuts and dentist appointment. No cavities! Yes! As a reward, we went to McDonald's for lunch.

I had my standard grilled chicken McWrap and a salad. I also did my standard job of stealing a few fries and McNuggets as well. 

 We are off to a friend's house for Passover tonight. Happy Passover to all that celebrate!

What did you do for Spring Break growing up? My family traveled a lot (wonder where we get it from!?!) so we always went somewhere…usually a road trip.
