143.4…Salsa Chicken Burrito Filling
We are big Mexican food lovers over here. Anytime my husband comes home from work and sees sour cream, shredded cheese and tortillas sitting out on the counter, he knows he’s in for a treat. Last night was no exception. I made a recipe for Salsa Chicken Burrito Filling that rocked!
Salsa Chicken Burrito Filling (Serves 4)

2 skinless, boneless chicken breast halves
1 (4 ounce) can tomato sauce
1/4 cup salsa
1 (1.25 ounce) package taco seasoning mix
1 teaspoon ground cumin
2 cloves garlic, minced
1 teaspoon chili powder
hot sauce to taste
- Place chicken breasts and tomato sauce in a medium saucepan over medium high heat. Bring to a boil, then add the salsa, seasoning, cumin, garlic and chili powder. Let simmer for 15 minutes.
- With a fork, start pulling the chicken meat apart into thin strings. Keep cooking pulled chicken meat and sauce, covered, for another 5 to 10 minutes. Add hot sauce to taste and stir together (Note: You may need to add a bit of water if the mixture is cooked too high and gets too thick.)
I didn’t end up putting hot sauce in it because I felt it was spicy enough and knew we were going to put Cholula hot sauce all over it anyway.
It was awesome topped with shredded lettuce, shredded cheese, sour cream and hot sauce. I served it with refried beans on the side and a salad with cilantro dressing.
Since the kids don’t have school today, I got to sleep in a bit. Breakfast was a toasted English muffin with peanut butter and a grapefruit.
I went to Cardio Muscle class then came home. My son had a couple of friends over so Lisa and Annette were nice enough to bring me Wahoo’s fish tacos.
Tonight I’m taking my son to the mall with a friend and her son to buy them suits for an upcoming event. Hopefully we have success….especially since my son HATES dressing up.
