140.8…Toasted Baguette

Sometimes there are simple things I always can’t remember/wonder how to make. Roasted asparagus, baked potatoes, etc. What temp? How long? Toasting a baguette perfectly is also one of them. I finally perfected it.

Toasted Baguette (20-25 toasts)

Original Recipe: Barefoot Contessa

Ingredients:

1 baguette
1/4 cup olive oil
Kosher salt
Freshly ground black pepper

Directions:

Preheat the oven to 400 degrees.
Slice the baguette diagonally into 1/4-inch slices. You should have 20 to 25 slices. Place the slices in 1 layer on a baking sheet. Brush each slice with olive oil and sprinkle with salt and pepper.
Bake the toasts for 15 to 20 minutes or until they are crisp and browned. Serve at room temperature.

I served these baguette slices with the Goat Cheese Torta with Garden Pesto. They were perfect!

I discovered I had Van de Kamp’s fish fillets in my freezer so I had a couple of those with leftover Two Cheese Mac and Cheese and some broccoli for dinner last night.

Breakfast this morning was a toasted English muffin with peanut butter and a grapefruit.

I went to Cardio Muscle class and came home. Lunch was fish tacos at Wahoo’s.

I took the kiddos to get flu shots and then came home to get ready for a friend’s birthday party tonight! Another friend is celebrating her birthday tomorrow with a spa day. Can’t wait!
