146.4...Spaghetti Sauce with Ground Beef

One of my husband’s favorite meals is spaghetti with meat sauce. He was quite pleased when he came home last night and saw exactly that cooking away on the stove. He was even more excited when he tasted it. It was fabulous (and easy)!

Spaghetti Sauce with Ground Beef (Serves 8)

Recipe slightly adapted from All Recipes

Ingredients:

2 Tbsp. olive oil

1 pound ground beef

1 onion, chopped

4-6 cloves garlic, minced

1 small green bell pepper, diced

1 (28 oz.) can diced tomatoes

1 (16 oz.) can tomato sauce

1 (6 oz.) can tomato paste

2 tsp. dried oregano

2 tsp. dried basil

1 tsp. salt

1/2 tsp. black pepper

Directions:

1. Heat olive oil in a large saucepan or Dutch oven. Add ground beef, onion, garlic, and green pepper. Cook and stir until meat is brown and vegetables are tender.

2. Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

The usual things happened this morning: school drop off, gym (Sculpt class) and errands. Lunch was egg salad on wheat toast with a salad tossed with Girard’s Light Champagne Vinaigrette.
