140.8…Second Chances

Just like that, the weekend flew by! Family arrived, my mother in law got married and poof…it was over! Time flies when you’re having fun, they say!

Friday night we went to our club to meet some friends for dinner. My husband and I split a Caesar salad.

We also split a pizza with onions, peppers and garlic.

Saturday morning I raced around the house trying to finish packing for the weekend. I raced out of the house to take my son to his basketball game and didn’t get a chance to sit down for breakfast so I ate a Cascadian Farms Oats & Honey Granola Bar on the way.

After the game, we drove to Pelican Hill where we were staying for the night with family. Yes, I was there last weekend too! You don’t see me complaining.

We checked in and went to the pool. I had hummus and pita for lunch as well as some (a lot) of sweet potato fries that arrived later.

The rest of the day I put the camera down and just enjoyed family time. We picked up Mexican food for dinner from Sharky’s and ate in our room.

Breakfast was room service Sunday morning. Can’t go wrong with a bagel, lox and cream cheese!

We got dressed, checked out of the hotel and went to my mother in law’s house for her wedding. The ceremony was outside and it was a perfectly beautiful day. Afterwards we enjoyed a brunch of more bagels and lox! :)

The kids swam for the rest of the day while we all chatted and caught up. Dinner was an assorted cold cut platter with different breads, sides and condiments.

I had a salami sandwich with mustard, cole slaw and potato salad. Eventually it was time to say our good byes and hit the road for San Diego. The weekend was definitely too short!

This morning’s breakfast was scrambled egg beaters with salsa, shredded cheddar cheese and avocado.

I took the kids to school and went to Cardio Muscle class. Monday’s class is my favorite and also the hardest. I’m sore EVERY time. I haven’t been in a couple of weeks so I know I’m really going to feel it!

Lunch today was the 3rd installment in our “Burger Crawl” through San Diego. Our 1st stop was The Habit, followed by Smashburger. This time we opted for The Counter. I had been to The Counter once and wasn’t super impressed but was excited to give them another chance.

The Counter allows you to build your own gourmet burger. You just check off the things that you want.

Since I had a weekend full of not so healthy eats, I opted for a salad to go with my burger instead of fries.

Great salad…very fresh ingredients. I chose the lemon vinaigrette dressing.

Last time I had a regular beef burger and I didn’t find the beef to be all that flavorful. This time I opted for the turkey burger. I had it with pepper jack cheese, roasted chilies, lettuce, tomato, chipotle aioli, red onion on a wheat bun.

The turkey burger was MUCH better…so much more flavorful! I would definitely order it again! Here’s to second chances!
