145.6...Asian Food Overload

After an Asian lunch at Pei Wei on Monday, we went to Benihana for dinner to celebrate my son’s return home from camp. More Asian food.

Tuesday’s breakfast:

I went to Sculpt class at the gym.  I took my son to his golf lesson. Lunch was half a turkey sandwich, veggies and ranch dressing:

My son went to Alicia’s house to spend the night with her son. My husband was working late. Therefore fish was on the menu! Usually it’s salmon but I bought some frozen tuna steaks at Costco so I decided it was the night to try it. I seared it in a pan with a bit of olive oil, salt and pepper. It was so good!

I also bought Olive Garden’s Italian dressing at Costco. I couldn’t help myself. I love that stuff. I had a big salad last nigh with the dressing.

I went to a yoga class at the gym. I haven’t been to a yoga class in years! I was really sore from the last two days of workouts so it sounded like a good idea. It was!

I met Alicia and our kids for lunch at Tabu Sushi. The Asian food continues.

145.6...Homemade Double-Chocolate Pudding with Whipped Cream and Chocolate Shavings

The final recipe for my husband’s Poker Night is the dessert: Homemade Double-Chocolate Pudding with Whipped Cream and Chocolate Shavings. You can make them ahead and add the whipped cream right before serving.

Homemade Double-Chocolate Pudding with Whipped Cream and Chocolate Shavings (Serves 8)

Recipe from Phillis Carey


3 Tbsp unsweetened cocoa powder

3 Tbsp cornstarch 

1 tsp. instant espresso

1/4 tsp. salt

2 cups heavy whipping cream, divided use

3 large egg yolks

2 1/2 cups whole milk

1/2 cup sugar

1 tsp. vanilla

4 oz. chopped semisweet chocolate


1. In a large heatproof bowl, whisk together the cocoa powder, cornstarch, espresso and salt. Whisk in 1 cup cream, a little at a time, until you have a smooth mixture. Whisk in the egg yolks.

2. Pour the milk into a 4-quart saucepan and stir in the sugar. Heat over medium heat, stirring frequently, until the sugar is dissolved and the milk just begins to simmer.

3. Temper the egg mixture by pouring some of the hot milk into the bowl of cream and egg mixture, whisking to combine. Repeat a couple of times until most of the milk is added. Pour everything from the bowl into the saucepan.

4. Bring the pudding to a full boil, over medium high heat, whisking constantly and making sure to get the whisk into the corners of the pan when stirring. Cook the pudding for 2 minutes after it starts to boil, whisking constantly and vigorously.

5. Remove from heat and stir in vanilla then the chopped chocolate and let sit for 1 to 2 minutes to melt chocolate. Whisk vigorously until chocolate is fully incorporated.

6. Spread pudding into a bowl or into individual bowls and cover with plastic wrap pressed onto the surface of the pudding. Refrigerate until cold, 2 hours or up to 3 days.

7. When ready to serve, whip the remaining cream with 1 tsp vanilla and 2 Tbsp sugar. Add to top of pudding along with chocolate shavings. (Use a vegetable peeler to make shavings.)

Thursday night I went to a dinner at our club for a golf tournament that my husband was participating in. There was a buffet with all sorts of choices. I still wasn’t feeling 100% so I didn’t get my usual 10 pound plate of food.

I went a bit rouge for breakfast Friday. I had half a bagel topped with a fried egg and a slice of cheddar cheese.

It was good but not as good as my standard breakfast. Note to self.

I went to an appointment and ran a couple of errands. For lunch I had half a salami sandwich and the rest of the chicken noodle soup.

Later on in the afternoon, I was hungry so I had a snack of cucumbers and ranch dressing.

My husband and I went to Samurai for dinner. Standard salad and soup:

I ate every bite. It was delicious! My appetite was back!

We came home and went to bed early. A quite Friday night at our house for sure.

My husband went to his golf tournament and I stayed home and got stuff done around the house. Since I was sick all week, I didn’t get much done so I had a bunch of catch up to do.

Lunch was a salami sandwich, veggies and ranch:

Dinner was at the club for the final golf tournament dinner. My 10 pound buffet plate was back in action.

Sunday morning I was up super early to catch my flight to San Francisco to pick up my son from sleep away camp. I got a breakfast sandwich from The Counter at the airport.

My son and I reunited after his two weeks away! We flew home. Lunch was a turkey sandwich and chips on the plane:

Last night we went to Burger Night at our club with some friends. I had a beef burger lettuce wrapped with cheddar cheese, onions, tomato, arugula and chipotle aioli. Sweet potatoes were my fries of choice.

I did something this morning that I hadn’t done in a month: go to the gym! I can’t believe it had been that long! I went to Tabata Drills class. Felt good to get back!

My son and I went to lunch at Pei Wei. I had the kid’s size steamed honey seared shrimp with brown rice and veggies.

We went over to Alicia’s with some other friends so we could hang out and the kids could swim. Fun Monday!

144.2...Green Salad with Pesto Dressing

One of the final two recipes that I wanted to share from my husband’s Poker Night awhile back is Green Salad with Pesto Dressing. It’s not your average green salad. This one is packed with marinated vegetables and loads of flavor. Add some shrimp or chicken and you’ve got a great meal!

Green Salad with Pesto Dressing (Serves 6)

Recipe from Phillis Carey


1 medium zucchini, sliced

8 ounces sliced white mushrooms

1/2 cup slivered roasted red pepper

3 Tbsp extra-virgin olive oil

2 Tbsp red wine vinegar

1 head Romaine lettuce, torn into bite-size pieces


2 cloves garlic, minced

1/2 cup fresh basil leaves

1/4 cup fresh Italian parsley leaves

1/4 tsp. salt

1/3 cup freshly grated Parmesan cheese

2 Tbsp pine nuts

1/2 cup extra-virgin olive oil


1. Combine zucchini, mushrooms and roasted peppers in a medium bowl. Toss with olive oil, vinegar, salt and pepper to taste. Let stand 30 minutes or refrigerate up to 4 hours.

2. In the food processor combine the garlic, basil, parsley, salt, Parmesan and pine nuts. Pulse to chop. With machine running add the olive oil and process to make a paste.

3. In a salad bowl toss lettuce with marinated vegetables and pesto and serve.

So….I was still feeling pretty crappy on Tuesday night. My husband brought me home chicken noodle soup from Milton’s for dinner.

I had toast for breakfast Wednesday.

I managed to get out of bed to run a couple of errands I needed to do. I picked up some more chicken noodle soup for lunch from the store. This one was especially good.

I spent the rest of the day in bed. Sucks being sick.

All I wanted for dinner was spaghetti. So I dragged myself out of bed and made it for dinner.

This morning I felt ready to eat my old favorite breakfast again.

145.2...The Longest Day

I’m a bit behind in blogging….things have been crazy around here! Wednesday night we went to Firenze for dinner. My husband and I split a Chopped Caesar salad:

I ordered the Polpette di Pollo (handmade chicken meatballs, baked, served with marinara over spaghetti):

I had never had this dish before and loved it! I only ate one of the meatballs because they were HUGE!

Thursday’s breakfast:

My husband and I hit the road for our flight to Acapulco, Mexico for a friend’s wedding. We parked our car at the Cross Border Express and walked across the bridge to Tijuana for our flight.

We had a little snack of quesadillas and chilaquiles at the airport.

We flew to Acapulco through Mexico City. We arrived at the Princess Hotel and checked in. Dinner was at their Italian restaurant. We split a Caesar and Caprese salad.

The Caesar wasn’t very good but the Caprese was great.

My entree was homemade pasta with shrimp and zucchini.

It was our friend’s birthday, so we enjoyed some of his chocolate cake for dessert.

Friday’s breakfast was Huevos Rancheros.

I did end up pouring the ranchero sauce all over it. The eggs were good but it wasn’t the best Huevos Rancheros I’ve ever had.

It was time to enjoy our first full day in Acapulco.

The weather was hot and humid but we were able to enjoy our lunch at the pool restaurant.

It was fabulous.

Later that evening, we went to the rehearsal dinner. There was a buffet complete with all sorts of different types of food. I had to roll with the tacos, chips, guac and salsas of course!

Saturday’s breakfast was two eggs over easy, bacon and hash browns. Perfect.

We went to the pool and beach for a bit. I brought my ceviche lunch to enjoy in our room.

Then it was time to head to the wedding! We enjoyed cocktails and appetizers before the ceremony.

We left the wedding around 1 AM and came home to sleep for 3 hours before having to head to the airport for our flight back to Tijuana. We had breakfast at the airport.

We arrived back to San Diego after crossing the bridge and picked up Jersey Mike’s for lunch.

This is where things got crazy. We came home long enough to change and headed out for our flight to Oakland to see Game 7 of the NBA Finals!

We were cheering for the Warriors and sadly they did not beat the Cavs. It was beyond awesome to be there though!!! Right after the game we flew home. It felt like the longest day of my life. We had been at a wedding in Acapulco, several flights and NBA Game 7 all in the same day. Crazy.

Monday’s breakfast:

My mom was still in town (she had stayed with my daughter) so I took them to lunch at Luna Grill.

I could only eat half my salad. I wasn’t feeling well. Thought I was coming down with a cold or something.

Monday night I went to a work-related event for my husband at the Grand Del Mar. Our dinner started with Arugula and Roasted Portobello Salad with Romesco, Goat Cheese and Meyer Lemon Oil:

I barely ate anything and by this point at the chills. I left immediately and went home. Ugh…it was more than just a cold. Maybe I ate something funky in Mexico? I don’t know.

This morning I struggled to get out of bed at the crack of dawn to take my daughter to the bus for her two week sleep away camp. Breakfast was toast.

I said goodbye to my daughter and went back home to get into bed, where I’ve been all day.

Lunch was half a toasted bagel with cream cheese.

I am feeling a bit better. Hubby is on his way home with chicken soup. :)

When was the last time you were in bed all day sick? I cannot even remember!
