143.0…A Big Anniversary

10 years ago today I married the love of my life.

We celebrated with another couple last night at a new restaurant in Del Mar: Sea & Smoke. We sat outside in their beautiful back patio and enjoyed several appetizers.

Cast Iron Prawns (avocado, ancho aioli, coriander, black bean puree):

They were all excellent but the Cauliflower Cheese Dip was the winner for me. I could have made a meal out of just that.

We also shared the Local Bibb Salad (shaved fennel, pickled cherry, crispy chickpeas, olive, white balsamic vinaigrette):

My husband also ordered the Sweet Corn Skillet Bread which may possibly be the best corn bread I’ve ever had.

For dessert my husband and I shared the “Chocolate” (pliable chocolate ganache, flourless chocolate cake, milk chocolate powder, Trader Vic’s Kona gelee, chocolate sauce):

This was a bit strange. I wasn’t a fan.  Overall I enjoyed Sea & Smoke. I loved the appetizers but would order a different entree next time.

This morning’s breakfast was an old favorite: Lucky Charms cereal and milk. We are really running out of food. I wasn’t upset about it. ;)

I went to Cardio Muscle class, ran some errands, then stopped for my last lunch at Wahoo’s for awhile.

I packed some more, then got ready to meet my husband at the Del Mar Racetrack for an event for his work. Since we have to leave bright and early tomorrow morning, our official anniversary celebration will have to wait.

142.6…Amazing Salmon

The other day I made the most amazing sauce for salmon.

I didn’t know what else to call it but "Amazing Salmon” because it was! I couldn’t get over how much I loved it.

Amazing Salmon (Serves 2)

Ingredients:

  • 2 (8 ounce) center-cut salmon fillets

  • 1/4 teaspoon kosher salt

  • 1 teaspoon vegetable oil

  • 2 cloves garlic, minced

  • 1 tablespoon chopped fresh tarragon (or 1 tsp dried)

  • 1 tablespoon chopped fresh flat-leaf parsley (or 1 tsp dried)

  • 4 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 teaspoon fresh lemon juice

  • 1 pinch cayenne pepper

Directions:

  1. Season salmon fillets with kosher salt. Line a baking baking sheet with foil and brush lightly with vegetable oil.
  2. Preheat oven's broiler on high and set the oven rack about 8 inches from the heat source.
  3. Mix mayonnaise, Dijon mustard, lemon juice, garlic, tarragon, parsley and cayenne pepper until combined.
  4. Place salmon fillets on the baking sheet. Spoon herb spread over the top and sides of each fillet.
  5. Cook under the preheated broiler until fillets are well-browned, about 5 minutes. Turn the broiler off and turn the oven to 350 degrees.
  6. Bake until the internal temperature of the salmon is 130 degrees  and salmon flakes easily with a fork, about 3 to 4 minutes.

After running a few errands, I made lunch at home. Tuna melts on English muffins with some pickles. I’m basically out of fruits and veggies. Pickles were my veggie today.

Tonight we are going out with friends for dinner. Good thing…not much to eat around here. Just in case you missed it, we are leaving Saturday for a European/Mediterranean cruise. I won’t be blogging so tomorrow will be my last post for awhile. Yes…I know you are sad.

143.4…Paella Party

If you can believe it, we are getting ready to go on a trip again. This time it’s with my husband’s entire family (30 people total!) on a European/Mediterranean cruise. We leave bright and early Saturday. Consequently, I’ve been trying to use up what I have in the fridge….

Lunch yesterday was the rest of the lettuce, ranch dressing and bread (for a turkey sandwich).

Then it was time to get ready for Bunco at Silvanna’s house. First stop was Tami’s house for a glass of wine beforehand. I was presented with one of the best gifts ever.

Somehow I managed to steer clear of the peach bread pudding. Probably because I had 5 pounds of paella in my stomach.

I went to the gym then came home to get ready for my mom’s arrival. She is here visiting for the day. We did a bit of shopping at the UTC mall, then stopped at Tender Greens for lunch. It reminded me a ton of Urban Plates. I chose the Grilled Chicken Cobb Salad (romaine hearts, goat cheese (in place of blue cheese), bacon, egg avocado, tomato, tarragon dressing).

143.0…Cabo!

Thursday night’s dinner rocked. I made this amazing sauce for salmon and ate it with brown rice and broccoli.

My husband and I dropped the kids off at the camp bus then headed to the airport for our flight to Cabo to celebrate our friends Saar & Kristie’s birthdays!

We ate lunch at the airport. I ordered a BLT and fries. It wasn’t very good. :(

We finally arrived to our villa and got settled and met everyone.

I immediately dug into the guacamole, pico de gallo and chips that the villa chef put out.

We hung out by the pool for the rest of the day until dinner was ready. We enjoyed a buffet of steak, chicken, fish and salad.

I went to spin class and got my butt kicked. We did high intensity interval training and it was HARD. Guess I deserved that after the indulgent weekend I had. :)
