143.0…A Big Anniversary

10 years ago today I married the love of my life.

Wedding Pic

We celebrated with another couple last night at a new restaurant in Del Mar: Sea & Smoke. We sat outside in their beautiful back patio and enjoyed several appetizers.

Cast Iron Prawns (avocado, ancho aioli, coriander, black bean puree):

July 2013 105

Oven Baked Pacific Mussels (garlic, cumin rouille, cilantro, Fresno chilies, grilled bread):

July 2013 106

Cauliflower Cheese Dip (Dijon mustard, goat cheese, crusty house bread):

July 2013 107

They were all excellent but the Cauliflower Cheese Dip was the winner for me. I could have made a meal out of just that.

We also shared the Local Bibb Salad (shaved fennel, pickled cherry, crispy chickpeas, olive, white balsamic vinaigrette):

July 2013 108

Very light and refreshing!

For my main course, I ordered the Niman Ranch Braised Lamb Shoulder (spicy herb puree):

July 2013 109

This was a bit too fatty for me. :( The sides were good though…

Multigrain Risotto:

July 2013 110

Spiced Kennebec French Fries:

July 2013 111

My husband also ordered the Sweet Corn Skillet Bread which may possibly be the best corn bread I’ve ever had.

For dessert my husband and I shared the “Chocolate” (pliable chocolate ganache, flourless chocolate cake, milk chocolate powder, Trader Vic’s Kona gelee, chocolate sauce):

July 2013 112

This was a bit strange. I wasn’t a fan.  Overall I enjoyed Sea & Smoke. I loved the appetizers but would order a different entree next time.

This morning’s breakfast was an old favorite: Lucky Charms cereal and milk. We are really running out of food. I wasn’t upset about it. ;)

July 2013 113

I went to Cardio Muscle class, ran some errands, then stopped for my last lunch at Wahoo’s for awhile.

July 2013 114

I packed some more, then got ready to meet my husband at the Del Mar Racetrack for an event for his work. Since we have to leave bright and early tomorrow morning, our official anniversary celebration will have to wait.

This is my final post until we get home. Bon voyage!!

142.6…Amazing Salmon

The other day I made the most amazing sauce for salmon.

Saar & Kristie's 40th Birthday 226

I didn’t know what else to call it but "Amazing Salmon” because it was! I couldn’t get over how much I loved it.

Saar & Kristie's 40th Birthday 225

Amazing Salmon (Serves 2)

  • 2 (8 ounce) center-cut salmon fillets

  • 1/4 teaspoon kosher salt

  • 1 teaspoon vegetable oil

  • 2 cloves garlic, minced

  • 1 tablespoon chopped fresh tarragon (or 1 tsp dried)

  • 1 tablespoon chopped fresh flat-leaf parsley (or 1 tsp dried)

  • 4 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 teaspoon fresh lemon juice

  • 1 pinch cayenne pepper

  1. Season salmon fillets with kosher salt. Line a baking baking sheet with foil and brush lightly with vegetable oil.
  2. Preheat oven's broiler on high and set the oven rack about 8 inches from the heat source.
  3. Mix mayonnaise, Dijon mustard, lemon juice, garlic, tarragon, parsley and cayenne pepper until combined.
  4. Place salmon fillets on the baking sheet. Spoon herb spread over the top and sides of each fillet.
  5. Cook under the preheated broiler until fillets are well-browned, about 5 minutes. Turn the broiler off and turn the oven to 350 degrees.
  6. Bake until the internal temperature of the salmon is 130 degrees  and salmon flakes easily with a fork, about 3 to 4 minutes.

Last night we took my mom to Casa de Bandini for dinner. We all shared some guacamole.

July 2013 101

Cute, huh?

I wasn’t super hungry so I opted for the Chicken Tortilla Soup.

July 2013 102

It was delicious.

Today “operation use up all food in the house” continued at breakfast.

July 2013 103

Scrambled egg beaters, sliced turkey, salsa and half a grapefruit.

After running a few errands, I made lunch at home. Tuna melts on English muffins with some pickles. I’m basically out of fruits and veggies. Pickles were my veggie today.

July 2013 104

Tonight we are going out with friends for dinner. Good thing…not much to eat around here. Just in case you missed it, we are leaving Saturday for a European/Mediterranean cruise. I won’t be blogging so tomorrow will be my last post for awhile. Yes…I know you are sad.

Have you ever been on a cruise?

143.4…Paella Party

If you can believe it, we are getting ready to go on a trip again. This time it’s with my husband’s entire family (30 people total!) on a European/Mediterranean cruise. We leave bright and early Saturday. Consequently, I’ve been trying to use up what I have in the fridge….

Lunch yesterday was the rest of the lettuce, ranch dressing and bread (for a turkey sandwich).

July 2013 081

Then it was time to get ready for Bunco at Silvanna’s house. First stop was Tami’s house for a glass of wine beforehand. I was presented with one of the best gifts ever.

July 2013 084

Red Solo Cup in the shape of a wine glass. Thank you Tami for changing my life. :)

When we arrived at Silvanna’s house, we were greeted with delicious appetizers.

Lisa got her very own Giant Red Solo Cup:

Silvanna and her husband made paella.

It was beyond amazing.

Somehow I managed to steer clear of the peach bread pudding. Probably because I had 5 pounds of paella in my stomach.

Thank you SO much Silvanna for a fabulous night! Everything was perfect! Please send me your paella recipe. Thank you.

Breakfast this morning was scrambled egg beaters with salsa and a half a grapefruit.

July 2013 086

I went to the gym then came home to get ready for my mom’s arrival. She is here visiting for the day. We did a bit of shopping at the UTC mall, then stopped at Tender Greens for lunch. It reminded me a ton of Urban Plates. I chose the Grilled Chicken Cobb Salad (romaine hearts, goat cheese (in place of blue cheese), bacon, egg avocado, tomato, tarragon dressing).

July 2013 088

Delish!!! Great place….I would definitely eat there again!

We are all off to dinner soon…enjoy your evening!

Have you ever had paella? Have a good recipe you’d like to share?

Thursday night’s dinner rocked. I made this amazing sauce for salmon and ate it with brown rice and broccoli.

Saar & Kristie's 40th Birthday 226

I can’t wait to share the recipe with you soon!!

Friday morning’s breakfast was pineapple Chobani, Cranberry Pecan Granola and strawberries.

Saar & Kristie's 40th Birthday 227

My husband and I dropped the kids off at the camp bus then headed to the airport for our flight to Cabo to celebrate our friends Saar & Kristie’s birthdays!

We ate lunch at the airport. I ordered a BLT and fries. It wasn’t very good. :(

Saar & Kristie's 40th Birthday 228

We finally arrived to our villa and got settled and met everyone.

Not too shabby, eh?? :)

I immediately dug into the guacamole, pico de gallo and chips that the villa chef put out.

Saar & Kristie's 40th Birthday 232

I think I ate my weight in guacamole while I was there.

We hung out by the pool for the rest of the day until dinner was ready. We enjoyed a buffet of steak, chicken, fish and salad.

Saar & Kristie's 40th Birthday 235

Dessert was Tres Leche cake and ice cream.

Saar & Kristie's 40th Birthday 236

Saturday morning there was a delicious spread for breakfast.

Saar & Kristie's 40th Birthday 237

I had some eggs, potatoes and bacon.

Saar & Kristie's 40th Birthday 238

And the most delicious huevos rancheros I’ve ever had.

Saar & Kristie's 40th Birthday 239

The rest of the day was spent by the pool. I wasn’t complaining!

Followed by the most amazing table-side Caesar salad that I’ve ever had.

After dinner, we went out dancing for a bit, then headed back to the villa.

Guess what we did all day Sunday?

More pool time!

Saar & Kristie's 40th Birthday 064

I did eat breakfast and lunch but can’t seem to find the pictures anywhere. I basically just ate more guacamole with whatever I could find to dip in it. :)

We had a fun dinner in the villa that evening. It all started with a fabulous tortilla soup.

Next was a green salad:

Yes, he was frightened. :)

Saar & Kristie's 40th Birthday 216

Happy Birthday Saar & Kristie! The candles were the type that are hard to put out.

Saar & Kristie's 40th Birthday 223

Very hard to put out.

Breakfast yesterday morning was pancakes and bacon.

Saar & Kristie's 40th Birthday 251

Then it was the moment we all had dreaded….it was time to pack up and head home. The fabulous party was over. Waahhhhh!

My husband and I had lunch at the airport. We shared flank steak tacos…

Saar & Kristie's 40th Birthday 252

And guacamole. Not, I was not sick of it yet.

Saar & Kristie's 40th Birthday 253

The food at the airport sucked. Boo.

We finally made it home, grabbed the kiddos and went to Pei Wei for dinner. I wasn’t very hungry so I just had the Thai Wonton Soup.

Saar & Kristie's 40th Birthday 255

Breakfast this morning was a toasted English muffin with peanut butter and a half of a grapefruit.

Saar & Kristie's 40th Birthday 256

I went to spin class and got my butt kicked. We did high intensity interval training and it was HARD. Guess I deserved that after the indulgent weekend I had. :)

What is one food that you could eat over and over again and never get sick of?
