135.2…Buttermilk Cornbread

As promised, I bring you my favorite cornbread recipe. It’s perfect to go with my Favorite Chili!

Buttermilk Cornbread

Ingredients:

  • 1/2 cup butter

  • 2/3 cup white sugar

  • 2 eggs

  • 1 cup buttermilk

  • 1/2 teaspoon baking soda

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 375 degrees. Grease an 8 inch square pan.
  2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
  3. Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.

Wednesday morning’s breakfast was a fried egg & cheddar cheese sandwich on a bagel thin.

I drove back to San Diego and stopped at Jersey Mike’s for lunch. I had a mini Italian sub with salt & vinegar chips.

I kept thinking the rest of the day what a perfect lunch that was.

I ran some errands, picked the kids up at a play date and then came home. My husband was kind enough to pick up Los Primos for dinner. I shared the carne asada mini tacos with him.

Yesterday morning’s breakfast was scrambled egg beaters with salsa and shredded cheddar cheese. I also had a slice of Cheddar-Scallion English Muffin Bread toasted with butter.

I took the kids to school, went to my nail appointment and then Luna Grill for lunch.

I had my favorite Greek salad with a chicken kabob.

Last night my husband and I went to a new member event at our new club. I enjoyed some champagne and delicious appetizers.

Since I was meeting all new people, I really didn’t want to whip out the camera and take pictures of the food and then have to explain my blog. Sometimes that’s awkward. :)

This morning I prepped for my Stella & Dot jewelry party before taking the kids to school. When I got back, I finished preparing the food right before everyone arrived.

I think everyone got a good bit of their holiday shopping done today!

After I cleaned up, I ran to Target and then came home to get the laundry started and make a quick turkey sandwich before picking up the kids at school.

135.8…My Favorite Chili

Sunday night was supposed to be Burger Night at our club but our kids weren’t feeling well so my hubby picked up dinner instead. We got Brett’s BBQ. I wasn’t complaining.

Baby back ribs, sweet potato fries and cole slaw. 

Monday morning’s breakfast was Trader Joe’s vanilla Greek yogurt and Coconut-Sour Cherry Granola. No fruit. I’m all out. Need to go to grocery store.

I went to Cardio Muscle class, ran some errands and stopped at Wahoo’s for lunch for some fish tacos.

The rest of the afternoon was spent working on my holiday card. I’m really excited about it. It turned out great!

For dinner I made my favorite chili! It’s the perfect combination between meat and beans.

My Favorite Chili (Serves 6-8)

Ingredients:

  • 2 pounds ground beef

  • 1/2 onion, chopped

  • 1 teaspoon ground black pepper

  • 1/2 teaspoon garlic salt

  • 2 1/2 cups tomato sauce

  • 1 (8 ounce) jar salsa

  • 1 packet chili seasoning mix

  • 1 (15 ounce) can light red kidney beans

  • 1 (15 ounce) can dark red kidney beans

Directions:

  1. In a large saucepan over medium heat, combine the ground beef and the onion and sauté for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.
  2. Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

I love to serve this topped with shredded cheddar cheese, onions and sour cream as well as my favorite cornbread.

This morning’s breakfast was scrambled egg beaters with shredded cheddar cheese and salsa. I ate it with a toasted piece of Cheddar-Scallion English Muffin Bread that I found in my freezer. :)

I took the kids to school and then drove to Los Angeles to visit my parents. My mom and I stopped by Corner Bakery for lunch. I had a BLT and a Caesar salad.

Then we went to Target and came home. I’ve spent the rest of the day hanging out with my parents and cleaning out my email. I don’t know how it gets so out of control so fast.

My mom picked up Luciano’s for dinner. We had veggie pizza and Caesar salad.

Thanksgiving Weekend Recap

I hope everyone had a fabulous Thanksgiving and a great holiday weekend! I know I did! I hope you are comfortable and ready to relax for a bit because there are a ton of food pictures coming your way!

The entire day was spent cooking, preparing and getting everything set up for Thanksgiving. Somewhere in between all that I ate lunch.

If you’re wondering how I stay organized trying to cook for that many people, this is how:

I call it my “Turkey Timeline”. I make a schedule for the day of when things go into the oven (what temperature, how long, etc.) and went to do everything else. That way it’s mindless for me. I don’t know how I’d do it without it!

I brought a couple of my side dishes out of the fridge to come to room temperature: Mashed Potatoes and Gulliver’s Creamed Corn:

I made homemade vanilla ice cream and whipped cream for everything as well.

And just like that….Thanksgiving was over. It’s amazing how much work goes into it and then it’s over in a flash! It was a great day filled with wonderful family and delicious food!

Friday morning’s breakfast was something I call “spicy eggs”:

I got the house mostly cleaned up, then we went to Costco for drinks for the tailgate we were co-hosting with my brother and his wife on Saturday. Lunch was at Island’s.

We came back home, packed up and hit the road for Los Angeles. I brought all my leftovers to my parent’s house so we could have Thanksgiving dinner with them.

My dad wasn’t feeling up the journey on Thanksgiving day so I’m glad we were able to bring it to him.

After dinner, we dropped the kids off with my sister in law and then checked into our hotel and went to bed. Big day coming up!

Saturday morning we ordered room service for breakfast.

We jumped in a cab and headed toward our tailgating spot near the LA Coliseum. It was the big game between USC and Notre Dame!

My brother and his wife went to Notre Dame while my husband and I both went to USC! A family feud every year, you could say. :)

In the end, Notre Dame ended up winning. While I was sad, I was excited for my brother. Notre Dame is number one and will be going to Miami in January for the BCS Championship. Go Irish!

Now we are finally home. Everyone is tired, the house is still a mess but the memories of this past weekend will remain forever.
