146.0...Crunchy Jumble Cookies

I had the baking bug yesterday so I whipped up a cookie recipe that I’ve been dying to try. I got the recipe for Crunchy Jumble Cookies from Phillis Carey. She described them as cookies that tasted like Nestle Crunch Bars. I was sold.

Crunchy Jumble Cookies (Makes about 36)

Recipe from Phillis Carey

Ingredients:

2 cups Rice Krispies cereal

1 1/4 cups flour

1/2 tsp. baking soda

1/4 tsp. salt

1/2 cup unsalted butter, softened

1/2 cup light brown sugar

1/2 cup sugar

1 large egg

1 tsp. vanilla 

1 cup milk chocolate chips

Directions:

1. Preheat oven to 350 degrees. Spread cereal on a baking sheet and toast for 5 minutes or until very hot but not brown-this is especially important if the box has been open for awhile. Cool completely.

2. Whisk together the flour, baking soda and salt and set aside. Beat butters and sugars with a mixer until blended and smooth. Add the egg and vanilla and beat well. Add the flour mixture and beat until combined. Stir and fold in the cereal and chocolate chips.

3. Drop by level tablespoonfuls onto parchment-lined baking sheets. Bake 12 to 15 minutes or until lightly browned. Remove and cool on racks.

They were really good although I think my Rice Krispies cereal was a bit stale so I will definitely try them again with a new box!

Sunday’s lunch was leftover My Favorite Chili

We went to Burger Night at our club with some friends. I had a turkey burger lettuce wrapped with jalapeños, red onion, tomato, chipotle aioli and mixed veggies.

It was a bit rough getting up this morning for sure. I had my normal breakfast then took the kids to school.

I met with my trainer at the gym for our regular butt-kicking Monday morning session. It’s definitely a great way to start the week although doesn’t feel like it at the time. Lol.

Tonight is a chill night at home watching football. Can’t wait!
