145.4...Toasted Sesame Ginger Salmon

As I started eating my dinner last night, my son asked me, “Why do you always eat salmon when Daddy’s not home?” I told him that Daddy doesn’t like salmon so I eat it when he’s not around. I offered him a bite of the Toasted Sesame Ginger Salmon I was enjoying and he said, “Yum!! How does Daddy not like this!?!”. ‘Nuff said.

Toasted Sesame Ginger Salmon (Serves 2 to 4)

Recipe adapted from How Sweet It Is

Ingredients:

1 1/2 pounds raw salmon

1/4 cup olive oil

2 Tbsp toasted sesame oil

2 Tbsp rice vinegar

2 Tbsp brown sugar

2 Tbsp soy sauce

2 garlic cloves, grated

1 Tbsp freshly grated ginger

1-2 Tbsp toasted sesame seeds

4 green onions, sliced

Sesame Ginger Honey Glaze:

1/4 cup honey

1 tsp. toasted sesame oil

1 tsp. soy sauce

1 tsp. (or to taste) Sriracha 

1/2 tsp. freshly grated ginger

1/2 tsp. toasted sesame seeds

Directions:

1. In a large bowl, combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, brown sugar and whisk well until combined. Add salmon to the dish or place everything in a ziplock bag, then refrigerate and marinate for 30 minutes. 

2. Preheat oven to 400 degrees. Lightly coat a baking dish with nonstick spray.

3. Remove salmon and place in the baking dish. Bake for 20 minutes.

4. Remove and serve immediately, with a sprinkling of toasted sesame seeds, green onions and the glaze below.

Sesame Ginger Honey Glaze:

Combine all ingredients in a bowl and whisk until smooth. Pour over salmon.

*Note: I didn’t have green onions so I used parsley. It’s green too right??

Monday night while my son was at basketball practice, my daughter and I went to dinner at Sammy’s Woodfired Pizza. I ordered the Chopped Chicken Salad, one of my favorite salads ever.

Breakfast yesterday was scrambled egg beaters with spinach, parsley and jack cheese.

After I took the kids to school, I had an appointment, then a PTO meeting at the school. Lunch was a delicious Grilled Chicken Greek Salad at Marketplace Grill.

I happened to have leftover white rice to go with it. Added some steamed broccoli and dinner was done.

After school drop-off, I went to the gym for an hour. Then it was off to Lisa’s to celebrate Valerie’s birthday!

I was only there for about 45 minutes before I had to head back to the school for an event in my son’s class. Lunch was a Chicken Caesar Salad at Urban Plates before running off to my next appointment.

Now I’m at Starbucks enjoying a green tea before picking up the kiddos from school.

I’ve developed this afternoon/evening routine to help me not snack and drink wine (lots of empty calories). Around 3:00 is usually when I want to start snacking. I’ve found that if I drink hot tea, it keeps me busy and takes awhile to drink so I avoid snacking. Then around 5:00 is when I start thinking a glass of wine sounds nice. Instead, I pour Pellegrino in a wine glass and enjoy that. Not exactly the same but it seems to be working. Just thought I’d share. :)

What are your tricks to avoid unnecessary snacking?
