144.2…Spicy Sesame Noodles with Roasted Chicken

I have't cooked in awhile. My friend pointed that out to me in spin class this morning. She doesn't have to wait any longer. I cooked last night. And it was delicious and a huge hit with the husband who likes noodles and spicy food.

Spicy Sesame Noodles with Roasted Chicken (Serves 4)

Recipe adapted from For the Love of Cooking


3 Tbsp. rice vinegar

2 Tbsp. soy sauce

2 Tbsp. canola oil

1 Tbsp. sesame oil

1/2 Tbsp. Sriracha chili sauce (more if you want it spicier - I probably put in three times this amount)

2 cloves garlic, minced

1 tsp fresh ginger, minced

8 oz. whole wheat spaghetti, cooked per instructions

1 1/2 cups roasted chicken, chopped

1 cup shredded carrots

1 cup red pepper, sliced

3-4 green onions, sliced

1 cup fresh cilantro, chopped

1 Tbsp sesame seeds


1. Combine the vinegar, soy sauce, canola oil, sesame oil, Sriracha sauce, garlic and ginger together. Mix well and set aside for at least 30 minutes to allow the flavors to combine.

2. Cook the spaghetti per instructions. Drain then return to the pan along with the chicken, bell peppers, carrots, green onions, and the sauce; toss until the noodles, chicken and vegetables are evenly coated with the sauce. Remove from the stove then add the cilantro and sesame seeds and toss to combine. Serve immediately.

Breakfast this morning was strawberry Chobani yogurt (surprise! no pineapple!), Almond Coconut Granola, strawberries and raspberries.

I dropped the kids off at school then headed straight to spin class. I went to Target then home for lunch.

146.2…The Vacation is Over

How can it already be Monday!?! I guess it's time to get back into gear and regular life!

Saturday night was my nephew's Bar Mitzvah dinner and celebration. It was held at a country club in Kennesaw and was complete with photo booth, dancing and a delicious buffet.

There was a buffet for the kids and I had to make sure the mac and cheese and fries were good.

We had to leave the party a bit early to catch our super early flight yesterday morning back to San Diego. We headed straight to the Chargers game. I took no pictures yesterday (heck - we all need breaks sometimes) but trust me that I ate nothing healthy.

Today is a new day. Time to reel it back in…you know….workouts, healthy food…basically stuff I've been avoiding lately. Today has been good so far…hopefully I can keep it up for a few days. ;)

Breakfast was scrambled egg beaters with salsa and cheddar cheese. Nothing else-we were basically out of food.

After taking the kids to school, I was able to drop off my husband's car for service and go to Cardio Muscle class. I'm looking forward to being sore tomorrow. 

I got much needed groceries and made tuna salad on greens for lunch.

Southern Grubbin'

Greetings from Kennesaw, Georgia!! The Bar Mitzvah celebrations are under way and we have been enjoying every minute of it.

Tuesday night before we left, we went to Casa de Bandini for dinner. I ordered the carne asada plate.

Wednesday morning we left early for our flight. I ate some peanut butter crackers on the way to the airport. I ate some random stuff on the plane but was saving up for the main event at my brother in law's house in Kennesaw: Big Pie in the Sky Pizza!

It's hard to tell from the photo but the size of this pizza is insane.

After dinner, we checked into our hotel and called it a night.

Thursday mooring we slept past breakfast. Definitely still on pacific coast time. We went to lunch at Taco Mac.  I ordered the fish tacos.

Not bad. I didn't end up eating the rice and beans but instead I some of my kids' french fries with a mixture of ranch and hot wing sauce. Now, that's what I'm taking about.

Later that evening we all went to the Braves vs Pirates baseball game. The Braves ended up losing but we had a great time anyway! I didn't eat anything at the ballpark because I was saving myself for hot wings at Taco Mac!

They aren't as good as my hot wings but they did the job.

Yesterday's breakfast was at the hotel restaurant. I had a an omelet loaded with veggies.

We headed to the marina for a day of boating and tubing. My husband was the captain of our boat.

The kids road on the tube behind the boat and had a blast. On the way back, we picked up pizza slices for lunch.

Last night we had a huge family dinner at Provino's Italian Restaurant. Our meal started with their amazing house salad:

Followed by the most amazing garlic rolls you've ever had.

They are literally swimming in garlic butter. Heaven.

We had a set menu for our event. There were several delicious choices but I settled on the lasagna.

We had several choices for dessert. I tried the tiramisu and chocolate cake.

Breakfast this morning was a repeat of yesterday but with potatoes this time.

We went to the Bar Mitzvah services, then headed to Tin Lizzy's Cantina for some Mexican food. We shared some chips, guacamole, salsa and queso dip:

Both were awesome.

Tonight is the big Bar Mitzvah celebration and then we are headed back to San Diego early tomorrow morning. Feels like we just got here!

144.6…Slim Pickings

I made Amazing Salmon last night for dinner. You know what that means, right?

My husband wasn't home for dinner. Since he doesn't eat fish, that's what I usually eat when he's not around. :)

Breakfast this morning was a waffle with peanut butter. Nuttin else.

We are going to Atlanta tomorrow for my nephew's bar mitzvah so I'm trying to eat what we have in the fridge so it doesn't go bad. It was slim pickings this morning. We are all out of fruit and after today's lunch, out of vegetables too.

That basically sums up my weekend in Palm Springs: Fun.

I'll fill you in but first let's rewind to Thursday night. I kept things simple for dinner and made soft tacos.

Friday morning's breakfast was an English muffin with peanut butter and watermelon.

After I dropped the kids off at school, I came home and Dina picked up Alicia and I and we headed off to Palm Springs to celebrate Dina's birthday. We stopped at Starbucks along the way and besides a latte, I had breakfast #2:

Reduced-fat turkey bacon and egg sandwich. 

We arrived at Cabazon Outlets for some shopping. We stopped at Blaze Pizza for lunch. This place was amazing. It was like Subway where you can tell them exactly what you want on your pizza. Then they throw it into the pizza oven and a few minutes later, you get a fresh, delicious pizza!

I chose salami, mushrooms, onions, oregano, basil and roasted garlic on spicy red sauce for my pizza. It was amazing. What was also amazing is that they had wine there too!

We had fun shopping all day. We came across these strange animal shaped purses:

When we were all shopped out, we drove to our hotel, The Hard Rock Hotel, in Palm Springs and checked in.

We quickly changed and headed to Circa 59 in the Riviera Hotel for dinner. My mom met us there for dinner. We all shared the Truffle & Mushroom Flatbread:

For my entree, I ordered the Flatiron Steak & Fries:

It was excellent. Hit the spot. 

Friday night was a special night for my mom. It would have been her 50th wedding anniversary with my dad if he were still alive. We helped my mom celebrate with a surprise dessert and a old photo of my dad.

After dinner, my mom went home and we headed back to our hotel. Before we did, we grabbed a couple of photos together at the hotel for fun.

We hung out at the Hard Rock's bar for a bit before calling it a night. It was a Fun night indeed!

Saturday morning was glorious. We slept in a bit, then headed downstairs for breakfast.

We all ordered the Eggs Benedict for breakfast.

Let's just say that lunch wasn't necessary after that goodness. 

Afterwards, we headed to the pool for a few hours.

Dina and Alicia went home and my husband and kids picked me up. They had just drove in from San Diego to spend the rest of the weekend in Palm Dessert. We headed over to my mom's house. 

Dinner was at my favorite Mexican restaurant, Fresh Agave. Of course we had to order the table-side guacamole!

I ordered the Camarones Diablas. Spicy shrimp!

It was SPICY and fabulous. I love Fresh Agave! 

Sunday morning was room service quickly before heading back to my mom's for a bit.

We hit the road back to San Diego and straight to my husband's company's family picnic. For lunch, I had some barbecue chicken, beans and salad.

I ended up going back for more chicken, it was really good! The kids played games for awhile until the picnic was over. We came home for a bit, then headed to our club for Burger Night.

Burger with pepper jack cheese, red onions, tomatoes, arugula, chipotle aioli and sweet potato fries. I want every Sunday night to end like this. 

It was back to the Monday morning craziness this morning. Breakfast was scrambled egg beaters with salsa, green onions, tomatoes and cheddar cheese.

After taking the kids to school I went to Cardio Muscle class. This was followed by an appointment, then off to volunteer at the school. I didn't have time for lunch so I packed a turkey sandwich, apple and peanut butter crackers ahead of time to eat in the car.

After school, it was hair cuts for the kids and now we are finally home! I need to unpack from the weekend and catch up on emails. Happy Monday! :)
