145.4...Chewy Chocolate Chip Heath Bar Cookies

It’s been raining all day. The perfect day to bake cookies! I went through a bunch of cookie recipes and finally settled on Chewy Chocolate Chip Heath Bar Cookies. It was a great choice. They are the perfect cookies for a rainy day…or any day for that matter.

Chewy Chocolate Chip Heath Bar Cookies  (Makes about 30 cookies)

Ingredients:

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

3/4 cup unsalted butter, melted

1 cup packed brown sugar

1/2 cup white sugar

1 Tbsp vanilla extract

1 egg 

1 egg yolk

1 cup Toffee Heath Bar bits

1 1/2 cups semisweet chocolate chips

Directions:

1. Preheat the oven to 325 degrees. Grease cookie sheets or line with parchment paper.

2. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended.

3. Beat in the vanilla, egg, egg yolk until light and creamy. Mix in the sifted ingredients until just blended.

4. Stir in the chocolate chips and Heath bar bits by hand using a wooden spoon. Drop cookie dough with a cookie scoop onto the prepared cookie sheets.

5. Bake larger cookies for 11 to 13 minutes, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Before my son’s basketball game on Wednesday night, we went to dinner at Tio Leo’s. I ordered the Camarones Rancheros with beans and rice.

I went to Sculpt class at the gym, then to Fashion Valley Mall to run some errands. I met some friends for lunch at True Food Kitchen. I ordered the Mediterranean Chopped Salad (cucumber, cherry tomato, watercress, pole bean, quinoa, feta, almond & lemon oregano vinaigrette):

Healthy and good. :)

Dinner that night was Souperior Meatloaf, wild rice and salad.

I went to an event at the school and then came home and went to bed.

After I took the kids to school I went to Zumba. Lunch was with some friends at Love Boat Sushi (formally Big Bang).

I went to the school for an event when I was called by the school nurse. My son had tripped and fallen over a short concrete wall, right on his face and knocked out most of his two front teeth! Needless to say, we spent the next few hours at the dentist getting them fixed. When it was done, his new teeth looked even better than the old ones! Lol. Poor little guy!

We came home and I attempted to make a pasta sauce that my kids loved when we went to Naples, Florida for last year’s spring break.

Eh. It was boring and didn’t turn out right. It probably needed to cook a lot longer but we were all hungry and couldn’t wait any longer. Oh well, you win some and you lose some. At least the salad was good:

My daughter went to a birthday party and my son went to a friend’s house. My husband and I went to Ruth’s Chris for dinner. My fabulous meal started with Seared Ahi Tuna:

Tonight Alicia and her family are coming over for dinner. I’m going to try a new recipe on them. Wish me luck!

143.8...Baked Salmon with a Mustard Crumb Crust

Yesterday I went to one of Phillis Carey’s cooking classes and loved one of the recipes so much, I came home and made it for dinner!  My husband was working late, and as i usually do when he’s not home for dinner, I made salmon. I had all the ingredients at home and was super excited to enjoy it again!

Baked Salmon with a Mustard Crumb Crust (Serves 4)

Recipe from Phillis Carey

Ingredients:

2 Tbsp plus 1 tsp. distilled white vinegar

2 Tbsp sugar

1 1/2 tsp. powdered mustard

1/3 cup grapes or vegetable oil

4 (6 to 7 oz.) salmon fillets

Salt and pepper to taste

Dried thyme

1 cup coarse fresh French bread crumbs

Directions:

1. Place vinegar, sugar and both mustards in a blender or food processor. With the machine running, slowly pour in the oil and blend until medium-thick sauce forms.

2. Preheat oven to 375 degrees. Place salmon fillets on a parchment-lined baking sheet and season with salt, pepper and thyme. Spread 1 Tbsp of the mustard sauce over each fillet, covering completely. Press breadcrumbs onto the fish and bake until cooked through and crumb topping is crisp and golden brown, 18 to 20 minutes. Serve salmon immediately, passing remaining mustard sauce separately.

I served the salmon with wild rice and steamed broccoli. Yum!

Monday night I was running around picking kids up here and there, so I defrosted and reheated a slice of Souperior Meatloaf and steamed some broccoli.

After I took the kids to school, I went to Phillis’ cooking class at the La Jolla Community Center. The class was “Phillis’ Favs” and obviously included some of her favorite recipes. 

The first recipe was Caesar Blue Cheese Salad with Bacon, Mushrooms and Pine Nuts:

Loved this salad! The dressing was delicious!!! Note to self: next time I have to bring a salad somewhere, bring this one!

The second recipe was the Baked Salmon with a Mustard Crumb Crust that I made last night:

Next up was Chicken Breasts Topped with Asparagus Hollandaise Mousse:

Yummy chicken! And I learned how to make hollandaise in the microwave so that was a plus!

The next recipe was Bourbon Flambeed Filet Mignon with Smoky Bacon Sauce:

Delicious!! Amazing sauce…was just missing a giant loaf of crusty bread to sop it up with!

144.8...Feeling My Age

On Friday night we went to Alborz for dinner. We used to go there all the time years ago but hadn’t been in awhile. We were craving Persian food so we gave it a try. My husband and I shared some hummus and pita.

It was ok. Nothing to write home about. 

My meal came with soup or salad. I remember really liking their salad so I went with that.

The salad was really good. My memory served me well.

More salad. :) The lamb was over cooked for my liking but other than that, it was ok. Not as good as I remember. 

Breakfast Saturday:

It was a pretty chill day at home. Laundry, relaxing, etc. We went to Pizza Rev, our new favorite pizza place, for lunch.

I got dressed for Lisa’s birthday party. We all met at her house and then headed downtown to Parq Restaurant and Nightclub for dinner and dancing.

Our meal started with the Little Gem salad (lardon, red onion, brioche, pear, walnuts, blue cheese dressing):

The Brussels were outstanding but I wasn’t impressed with the rest. Boo! 

We moved from the restaurant to the club for the second half of the night!

I didn’t go to bed until 3:00AM. That is BEYOND late for me!! I’m too old for that kind of stuff. Lol. 

Sunday morning I was dragging. Breakfast helped a bit.

My husband picked up Los Primos for lunch. We split carne asada mini tacos and a bean and cheese burrito.

Perfection. 

I laid on the couch and watched football all day. No joke. Did nothing. My body is not used to staying up that late. It’s funny…I would do that all the time in college with no problem!! I’m not in my 20’s anymore. 

I dragged my tired butt off the couch for some Spicy Noodles at Taste of Thai. Remember last time we went with a level 8 for spice level and it was too much?

This time we picked a level 7. I think it was even spicier than last time!! And we can handle our spice too….guess next time it’s a 5?

After I took the kids to school, I went to Hardline class at the gym. Lunch was with a friend at Urban Plates.  I had the albacore, Brussels sprouts and mushroom sauté with sweet potatoes. Yum!

My son is at basketball practice so I’m going to reheat something quick for dinner and go pick him up. When is Friday again?? :)
