144.0...Sloppy Joes II

Sloppy Joes are a favorite in my house. I do have a favorite recipe for Sloppy Joes so I was hesitant to try a new one. The verdict? Everyone couldn’t decide which one was best! This new recipe for Sloppy Joes is a winner too!

Sloppy Joes (Serves 4-6)

Recipe from Oh Sweet Basil

Ingredients:

3 Tbsp unsalted butter

1/2 cup onion, diced

1 red bell pepper, diced

1 1/2 tsp. garlic, minced

1 lb. ground beef

2 1/2 Tbsp dark or light brown sugar

2 Tbsp Dijon mustard

2 Tbsp Worcestershire sauce

3/4 tsp. liquid smoke

1 Tbsp chili powder

1 tsp. smoked paprika

1 cup ketchup

1/3 cup apple cider vinegar

Salt and pepper to taste

Buns for serving

Directions:

1. Heat a Dutch oven over medium heat and add the butter. Once melted, quickly add the onion and stir occasionally until translucent. Add the peppers and garlic and stir occasionally for 1 minute then add the ground beef and break it up with a wooden spoon, stirring it all together. Allow to cook for 3 minutes, stirring occasionally.

2. Add the brown sugar, mustard, Worcestershire, liquid smoke, chili powder, and paprika. Stir for 30 seconds and then add the ketchup and vinegar. Allow to cook for 5 minutes, season to taste and serve or cook up to 1 hour on low and then serve. The longer it cooks the better the flavor.

3. Scoop onto buns that have been brushed with butter.

Breakfast this morning:

I took the kids to school, went to Zumba at the gym, then met my husband at Seasons 52 for lunch. They were participating in San Diego Restaurant week and the deal was pretty good: a shared appetizer, an entree and we each got a small dessert.

We shared the Garlic Pesto Chicken Flatbread:

This was pretty darn good!

I ordered the Grilled Boneless Rainbow Trout (crushed potatoes, roasted carrots, grilled lemon):

I really enjoyed this. The fish was perfectly cooked and it came with a great lemony aioli.

Dessert was fabulous. Chocolate Peanut Butter Torte:

I’m normally not the biggest Seasons 52 fan but I enjoyed my meal today!

Happy Friday everyone!

Any fun weekend plans?
