152.0...Blended Margaritas

I made homemade margarita mix for the first time recently and it tastes SO much better than the stuff you buy at the store. It makes a ton and you can freeze it for your next party!

Blended Margaritas  (Makes 4 to 6)

Recipe from Phillis Carey

Ingredients:

Course salt and lime wedges

1 1/2 cups Homemade Margarita Mix (recipe below)

1 cup gold Tequila 

1/4 cup Triple Sec

8 ice cubes

4 to 6 lime slices

Homemade Margarita Mix (Makes 8 cups):

3 cups  water

3 cups sugar

2 cups fresh lemon juice

2 cups fresh lime juice

Directions:

1. To make the margarita mix: combine water and sugar in a large saucepan. Stir over medium heat until sugar dissolves. Bring to a boil. Cool syrup at least to room temperature. Mix syrup, lemon juice and lime juice. Cover and chill until cold. Keeps 1 week in refrigerator or freezes well.

2. Rub rims of 6 glasses with lime wedges and dip rims in coarse salt. Set aside. Combine margarita mix, Tequila, Triple Sec and ice cubes in blender. (Depending on the size of your blender, you may have to blend half at a time.) Process until well blended. Pour into glasses. Garnish each glass with a lime slice.

Friday, June 29th, I went bathing suit shopping with Alicia and Kate then had lunch with Alicia at Tabu Sushi.  Miso soup:

That evening a bunch of us went over to Jessy’s for dinner. He had a whole spread of Indian food for dinner.

Yum!! We seriously had a blast that night! So much so that I ended up slipping on the steps and breaking my toe. Whoops. My sister in law, who’s a hand surgeon, said there’s not much I can do about it. Elevate it, ice it and wear flip flops. Guess the gym is out for awhile. 

Saturday, June 30th’s breakfast:

Lunch was leftover Mexican Bean Salad, quesadillas and Bitchin Sauce:

That evening we went to Stone Brewery for a friend’s surprise 40th birthday. The surprise went off without a hitch and the food was good too!

 Later on that evening, we picked up Cotijas Mexican food. I split a bean and cheese burrito with my husband.

Sunday morning I was up super early to catch my flight to San Francisco to pick up my son from sleep away camp. I had a Reduced Fat Turkey Bacon Sandwich from the Starbucks at the airport for breakfast.

I landed and met one of the counselors and my son at the arrival area. I hadn’t seen him in two weeks! 

We had lunch at one of the places near our gate. I had a Korean BBQ bowl which was decent:

While I was getting my son, my husband picked my daughter up from the train station from being away at camp for the past two weeks as well! We were finally all reunited!

We went over to Alicia and Joe’s for dinner that night. They had tacos from El Nopalito. So good!

Monday’s breakfast:

I spent the morning getting all the camp bags unpacked and stuff organized around the house. 

Lunch was tuna salad, Bitchin sauce, pretzel thins and pickles:

The kids had orthodontist appointments. Then we took them to see the movie “Uncle Drew” with Alicia and her family. We all had dinner at Davanti afterwards. We all shared the Focaccia di Recco (Ligurian flatbread, soft cow’s cheese, honeycomb):

I ordered the Cacio e Pepe (spaghetti, pecorino, black pepper):

For lunch, we stopped at Jack in the Box before the kid’s haircut appointments. Two tacos and a side salad:

Then we headed off to the La Jolla Beach and Tennis Club for the next couple of days.  We checked in and hung out on the beach for a bit before heading to dinner at the Shore Rider.  I forgot to take a picture of my dinner but I ordered the Traditional Ahi Poke with rice and avocado. It was excellent. 

Wednesday morning (July 4th) I slept in. Eventually we went down to the beach for the day. It was too late for breakfast when I was hungry so I ordered lunch instead. Fish tacos:

We had a fun day at the beach complete with a barbecue dinner that our friends set up. I had a hot dog and some cheese and crackers:

For breakfast Thursday, my husband picked up Harry’s Coffee Shop and we split a California Burrito.

Thank goodness we split it. The thing was massive!

We hung out on the beach again with friends. For lunch, I had a Chopped Romaine salad from Piatti.

Later that afternoon, we packed up and headed home. We went over to Alicia’s for dinner and had pizza and salad from Leucadia Pizza.

Yesterday’s breakfast:

No avocado because I was out. 

I ran some errands and picked up Ototo Sushi for lunch.

We are going to Europe next week so I started getting organized and packed for the trip. For dinner we picked up Gor Gai and I guess I didn’t snap a pic. We had Chicken Chow Mein Noodles and Chicken Green Curry. Yum!
