148.8...Instant Pot One-Pot Spaghetti with Meat Sauce

After my initial Instant Pot fail, I was reluctant to try another Instant Pot recipe but I’m glad I did. My friend sent me the recipe for Skinnytaste’s Instant Pot One-Pot Spaghetti with Meat Sauce and said it was good so I went with that. It was definitely a hit at my house! Beyond easy to make and not a lot of cleanup since everything is cooked in one pot!

Instant Pot One-Pot Spaghetti with Meat Sauce (Serves 5)

Recipe from: Skinnytaste 

Ingredients:

1 lb. ground turkey

3/4 tsp. kosher salt

1/4 cup diced onion

1 clove minced garlic

1 jar (25.25 ounces) marinara sauce (she recommends Delallo Tomato Basil Pomodoro Sauce)

2 cups water

8 ounces whole wheat spaghetti

Grated parmesan cheese, optional for serving

Directions:

1. Press sauté on the Instant Pot. When hot, add the turkey and salt and cook, breaking up about 3 minutes.

2. Add the onions and garlic and cook until softened, 3 to 4 minutes.

3. Add the marinara, water and spaghetti (broken in half), making sure the liquid covers everything without stirring.

4. Cover and cook on high pressure 9 minutes.

5. Quick release so the pasta doesn’t continue cooking, and serve topped with grated cheese if desired!

Note: Beef can also be used in place of turkey, gluten-free pasta can be used in place of whole wheat. To make this on the stove, cook in a large pot with the same ingredients over medium-low heat covered about 17 minutes, or until tender, stirring half way.

On Wednesday, I met a bunch of my friends at Ototo Sushi to celebrate Lisa’s birthday. Alicia and I split our usual items plus we each had a miso soup.

I went to my son’s end of season basketball game and they won! The game was so close!

I took my dog Arnold to the vet after I took the kids to school. She’s been limping and it turns out she tore her ACL. How does this happen?? Ugh. Now she needs surgery next week. This should be fun.

I went for a run around the neighborhood. Snack:

I ran some errands and stopped at NaPizza for lunch. I ordered my usual Greek Quinoa Salad.

I guess they changed up the menu a bit because it didn’t come with salmon like it used to. I guess you have to order it extra. Oh well. 

I took my son to get a haircut after school then came home to make dinner. I made Kung Pao Chicken (recipe to come) which was another big hit!

After I dropped off the kids I went to yoga. I hadn’t been in awhile and it felt great!

I met my husband and some friends at Coasterra for lunch. We shared the Carne Asada Nachos which were seriously legit.

I had a meeting for the Bar Mitzvah afterwards. I picked up the kiddos and now I’m home. So glad it’s Friday!
