146.0...Chicken Fajitas

Monday night I whipped up a super easy recipe for fajitas. You can do most of the prep work ahead and just throw it together at the last minute. It was definitely a hit with the family!

Chicken Fajitas (Serves 4)

Recipe adapted from Simply Recipes

Ingredients:

1 1/4 to 1 1/2 pounds skinless, boneless chicken breasts, cut into strips

Salt

2 Tbsp canola, safflower, peanut or grapeseed oil (a high smoke point oil)

1 large onion, sliced lengthwise (root to tip) into 1/4-inch strips

3 bell peppers of various colors, sliced into 1/4-inch strips

Marinade:

2 Tbsp lime juice

3 Tbsp olive oil

1 garlic clove, minced

1/2 tsp. salt

1/2 tsp. ground cumin

1/2 tsp. chili powder

1/2 jalapeño, seeded and minced

1/4 cup chopped cilantro

Extras:

8-12 flour tortillas

Salsa

Sliced avocado

Sour cream

Directions:

1. Mix all the marinade ingredients together in a glass or plastic container. Add the chicken, mix well, cover and let marinate at room temperature for 1 hour or up to 8 hours in the fridge.

2. Heat a large cast iron frying pan on medium high heat for 1 to 2 minutes. Add a tablespoon of canola oil (or other high smoke point oil) to the pan. 

3. As soon as the oil begins to smoke, add the chicken to the pan. Salt the chicken. Let sear a bit before stirring. Cook chicken for 2-3 minutes then remove to a plate.

4. While chicken is resting, cook the onions and peppers. Add more oil if necessary. Let them cook undisturbed for 2 minutes. You want them to sear with some blackening. Stir the vegetables and continue to cook for another 2 minutes.

5. Add the chicken back to the pan and finish cooking, about 2-3 minutes.

Saturday night we tried a new (to us) Chinese restaurant: Del Mar Rendezvous. The reviews online looked really promising!

I ordered the Fiery Braised Fish Clay Pot (fresh water fish sautéed with red bell pepper, lettuce, and white onion in a Szechuan chili sauce; served in a sizzling clay pot):

It might not look like much but it was excellent. My husband enjoyed his meal too. I think we may have found our Chinese restaurant finally!

Sunday’s breakfast was the last of the lox scrambled with 2 eggs, 1 egg white and scallions. Yum!

That afternoon, I took my daughter to the park for a class playdate. I knew there was only pizza being served so I quickly stopped at the store to pick up a salad so I wouldn’t be tempted by the pizza.

Later on I had a snack of pineapple and watermelon.

For dinner, we tried a new (to us) Italian restaurant: Trattoria Ponte Vecchio. I guess it was a weekend for trying new restaurants!

My husband and I spit the Caprese (fresh creamy mozzarella cheese and tomatoes in extra-virgin and basil oil dressing):

I ordered the Pollo Piccata. Shocker.

It was excellent. We will definitely be back to Trattoria Ponte Vecchio!

Monday it was back to my regular breakfast:

I took the kids to school, then went with my daughter on her class field trip to Julian for apple picking and panning for gold. Along the way, I made some new friends:

We brought lunches from home. I had tuna salad, celery, crackers and pickles.

That night was fajita night. I didn’t use the tortillas, but turned mine fajitas into a fabulous salad.

I took the kids to school, then went to Orange Theory for another sweaty workout. 

Lunch was a turkey sandwich, bell peppers, ranch dressing and pickle spears.

When I got home from picking the kids up from school, I was a bit hungry so I had some pretzels and hummus.

I took my son to basketball practice. I went to Sammy’s Woodfired Pizza for dinner while I waiting for him to finish.

I ordered the Tomato Soup (no oil):

After drop off, I went to the gym to jog on the treadmill.

I didn’t finish my salad yesterday so it became part of my lunch today along with another turkey sandwich.

Tonight we are off to the Padres game for an exciting night of baseball!

  1. I love Trattoria Ponte Vecchio but haven't been in ages since it's not little kid friendly. How weird about shredding up the fish at Lemonade. We ordered the seared ahi tuna last time and my 6yo ate most of it. The truffle and regular mac 'n cheese is good especially with the braised short ribs.

    Going tonight to Addison's! Been once but years ago so it's practically new.
