141.2…Home Maintenance

I can’t believe the weekend is already here! I guess that’s what happens when you have only a four day work week. Can’t all weeks be like this!?!

I cannot say my meals for the last 24 hours have been exciting but they all tasted good, at least!

Dinner last night was more spaghetti leftovers with salad.

Breakfast this morning was pineapple Chobani yogurt, Special K granola, strawberries and blueberries.

After taking the kids to school, I attended a special event at the school, then went grocery shopping.

The rest of my day was just as unexciting as my meals: I changed all the batteries in my smoke alarms and replaced all heating/AC filters. Exciting, huh?

Lunch was a turkey sandwich with carrots & ranch dressing.

I’m off to the school again for another event and then it should be a quiet evening at home. We are going to Los Angeles (again!) this weekend for my nephew’s birthday party. Have a great weekend!

142.2…Birthday Burgers

Last night we helped a friend celebrate his birthday at Fairbanks Country Club. It was “Burger Night” there and I was looking forward to trying their burgers. They did not disappoint! I ordered a turkey burger with chilies, lettuce, tomato, onion, jack cheese and salsa.

I also shared onion rings, sweet potato fries and cole slaw with the rest of the table.

Dessert was another favorite: Birthday Cake!

Breakfast this morning was a toasted English muffin with peanut butter and a grapefruit.

After taking the kids to school, I went to the gym. Third day in a row!

Lunch was tuna salad, crackers and an apple.

I’ve been spending the day doing more scrapbooking and cleaning around the house. Feeling very accomplished!

141.2…Spring Cleaning

It happens around this time every year. I get in the mood to get organize, get rid of stuff and try to use up the stuff I have instead of buying new. Spring Cleaning has begun!

Part of my cleaning frenzy is to try and use up what food I have in my pantry, freezer, etc. I had leftovers of pasta and salad in the fridge last night and decided that that would be a great place to start.

After I took the kids to school, I went to the gym for an hour of cardio and weights. Afterwards I cleaned out part of my garage. It’s been a project I’ve been putting off forever and decided today was a good day to do it!

Lunch was a tuna sandwich and the last of the leftover salad.

I’ve spent the last couple of days putting the kids’ school artwork/keepsakes in scrapbooks. Not an easy task when you haven’t done it in a couple of years!

141.4…Memorial Feasts

Did everyone have a fun Memorial Day weekend? I had a great time celebrating with friends and family. I also happened to enjoy a ton of delicious eats….the way every Memorial Day holiday should be!

It all started on Saturday afternoon. My mom picked me up from the train station and we headed to Nordstrom to do a bit of shopping and have lunch. I had the Greek Salad.

Dinner was at one of our favorite restaurants growing up: Steer & Ale. There’s nothing fancy about this place but it brings back so many great memories.

I enjoyed going down memory lane with some wine.

My meal started with a salad. Basic but delicious.

My entree was steak, baked potato and garlic bread.

Breakfast Sunday morning was toast with peanut butter.

My mom and I headed over to my brother’s house for a Memorial Day party.  We arrived to a delicious spread of appetizers.

I tried one of each: beef, chicken and pork. I thought the beef and pork were the best so I went back for one of each of those a bit later.

Rice Krispy Treats AND Coco Krispy Treats. Heads up: the Cocoa Krispy Treats were amazing.

After the party I went back with my husband (he had arrived earlier in the day) to our hotel.

Monday morning’s breakfast was a Starbucks latte.

I knew I’d be eating a ton later so I decided to save the calories by skipping breakfast. :)

We went over to my brother in law’s house for the day. More yummy appetizers!

Goat cheese, fig butter, pecans and cranberries. Holy yum!!

We picked up Woodranch for lunch. I enjoyed some tri tip, chicken, mac & cheese, salad and corn.

I went back for seconds of the tri tip and mac & cheese.

Eventually it was time to drive back to San Diego. I didn’t eat dinner because I was seriously stuffed from my whole weekend of fabulous eats.

After I took the kids to school, I went to spin class. I love starting the week with a great workout.

141.8…All Aboard!

Greetings from aboard the train! I’m on my way to Los Angeles to visit my mom. Love the free wifi on the train.

Thursday night we took the kids to PF Changs for dinner. I had the Shanghai Shrimp with Garlic Sauce and brown rice.

We took the kids to an event at the school afterwards.

Yesterday’s breakfast was pineapple Chobani, Special K granola and strawberries.

I took the kids to school, went to a meeting and then volunteered at the school all day. I did stop for lunch at Chipotle.

Chicken bowl with brown rice, fresh salsa, hot sauce, guacamole, black beans, lettuce and tons of hot sauce. Basically a party in a bowl.

I brought the kids home from school. Later that evening, my husband and I went out for “date night.” We saw “Hangover 3” before having dinner at Mia Francesca. The movie was funny but not as good as I had hoped. Oh well…most sequels aren’t.

At Mia Francesca, my husband and I split a Caesar salad.

Salmon with avocado, tomatoes, red onion and balsamic glaze over grilled asparagus. Delicious! I’ve never had a bad meal at this restaurant.

I got packed up and headed to the train station. I’m going to spend the day with my mom and then my husband and kids will join us tomorrow. My brother is throwing a Memorial Day party tomorrow which should be a blast!

142.2…Lemon Bars

I have bags and bags of lemon juice in my freezer. People always are giving me lemons…I think they want me to bake something for them or make lemonade or something.

All of a sudden the other day, my lemon tree had tons of lemons on it, ready to be picked.  I couldn’t bear to put anymore lemon juice in my freezer so I decided to do something with them. Lemon Bars!

Lemon Bars

Adapted from


  • 1 cup butter, softened

  • 1/2 cup white sugar

  • 2 cups all-purpose flour

  • 1/2 tsp. salt
  • 1-2 Tbsp. lemon zest
  • 4 eggs

  • 1 1/2 cups white sugar

  • 1/4 cup plus 1 Tbsp. all-purpose flour

  • 2/3 cup lemon juice


  1. Preheat oven to 350.
  2. In a medium bowl, blend together softened butter, 2 cups flour, 1/2 cup sugar, salt and lemon zest. Press into the bottom of an ungreased 8x11 inch pan.
  3. Bake for 25 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup plus 1 Tbsp flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  4. Bake for an additional 25 minutes in the preheated oven. The bars will firm up as they cool.

These are leftover from the Beef Enchiladas I made the other night. They weren’t as good as fresh and looked terrible when reheated but it was an easy, quick dinner so I can’t complain too much.

Yesterday’s terrible Subway sandwich left me hungry so I had an apple and peanut butter for a snack.

For dinner I pulled a container of “Mom’s Goulash” out of the freezer, defrosted it, added some more marinara sauce and heated it up.

It reheated really well! I thoroughly enjoyed it. I made a Caesar salad to go along with it. Great dinner!

After I dropped the kiddos off at school, I went to the gym for some treadmill time.

Lunch was fish tacos at Wahoo’s with my friends. I hadn’t been in so long…I miss my tacos!
