137.6…Black Bean, Chickpea and Corn Salad

Last night was Hot Wing night at my friend Alicia’s house and it was my turn to provide the salad. I was tired of bringing over the same old boring salad so I looked through my recipes to see if something caught my eye.

As soon as I saw the recipe for Black Bean, Chickpea and Corn salad, I knew we had a winner!

Black Bean, Chickpea and Corn Salad

1/2 cup fresh lime juice

1/3 cup olive oil

2 garlic cloves, minced

1 tsp salt

1/2 tsp cumin

1/4 tsp chili powder

1 (15 oz.) can black beans, rinsed and drained

1 (15 oz.) can chickpeas (garbanzo beans), rinsed and drained

1 1/2 cups frozen or fresh corn kernels

1 red bell pepper, chopped

2 tomatoes, chopped

1/3 cup chopped red onion

1/2 cup cilantro

1 avocado, diced

Place lime juice, olive oil, garlic, salt and spices in a small jar. Cover with lid and shake until ingredients are well mixed.

In a salad bowl, combine beans, corn, bell pepper, tomatoes, onions and cilantro. Shake lime dressing and pour it over the salad. Stir salad to coat with dressing; add avocado.

We made our famous hot wings and enjoyed the Black Bean, Chickpea and Corn Salad with it. Alicia bought a new kind of organic chicken wings and they were bigger than our normal Foster Farms wings. They tasted really good but it was harder to eat our normal huge quantities. I only managed to eat 11. Oh, the shame!

I was excited about this morning’s breakfast because I made a new granola!

Nutella granola. Yes, you heard me right. And it rocks. I will post the recipe soon!

I enjoyed the Nutella granola with Chobani pineapple yogurt and berries. I was worried about the combination of pineapple and Nutella but it worked out just fine.

I took the kids to school and walked to my Cardio Muscle class. It was a hard class today! I will most definitely be sore tomorrow!

After I got home, I started preparing a few recipes for a party at my house tomorrow night. For the past four years, I’ve been hosting a Swap party. You bring all your clothes, shoes, accessories that you don’t wear anymore and everyone picks from it all. You go home with a ton of new (to you) stuff!

Turkey sandwich with avocado, lettuce and tomato as well as some of the Mexican Bean Salad I made this past weekend.

I picked up the kids from school and came home to finish cooking. Tonight my husband is working late so I will be enjoying some leftovers from the weekend.

    We are klassy though and bring our t.v. outside to watch White Sox games. :D

  4. Chicken is anything but difficult to plan, boneless solidified chicken bosoms might be cooked from numerous points of view.
