142.8…Book Club Booyah!

I had an extreme chocolate craving on the way to my hair appointment yesterday and found this sample of Skinny Cow Dreamy Clusters in my pantry. I got the sample at BlogHer and hadn’t tried it yet.

They are chocolate covered crispy, caramel-y goodness! I really liked them! They come 5 to a bag and are 120 calories for all of them. They are small but after 3 I felt satisfied and decided to save the other 2 for another day.

Back to my hair…..I hate it. Boo! I went a lot darker with the color and I don’t like it. The hairdresser couldn’t have been nicer and I really enjoyed chatting with her. I contacted her and let her know how I felt and I’m going to go back in on Tuesday for highlights. Hopefully it will get fixed! I’ll have to have someone take a picture of me to show you guys.

I got home just in time to set up for my book club. I cut up the Rice Krispies Treats that I made yesterday and added some Trader Joe’s Cheesecake Brownie Bites to the platter.

I had a couple of crackers with cheese, some carrots and hummus and some almonds. I also had two glasses of wine. I was proud of my restraint. Normally I attack food like there’s no tomorrow but I held back. I ate enough to feel satisfied. Booyah!

This morning I ate the last sample of Quaker’s Oatmeal Squares that I received at BlogHer.

I added some Fiber One Honey Squares to bulk it up a bit and ate both of them with unsweetened almond milk. I also had a bowl of delicious strawberries.

I took the kids to school and dropped my car off for service. I piled all my crap into their loaner car and went to Zumba.

Lunch was a turkey & Swiss cheese sandwich on whole wheat as well as carrots & red bell pepper with hummus.

I picked up my daughter at school  and took her to her “Dog Smart” class. She did really well today! She announced afterwards that she wasn’t afraid of dogs anymore and doesn’t have to go to class anymore. We’ll see what happens next week. :)

We picked up my son and made our way home. I ate a Kellogg’s Fiber Plus bar on the way.

I need to pick up my car from being serviced and go to the kids’ open house at the school tonight. It will be a leftovers dinner kind of night!

144.2…Chicken Cacciatore

I was really hungry all day yesterday. It seemed like nothing satisfied me. Don’t you hate that!?!

On the way to pick up my son from school, I brought a snack along with me because I was still hungry after my lunch and OTHER snack.

Last night’s dinner rocked. Simple as that. My husband is a big fan of Chicken Cacciatore so I have made many recipes but this one was my favorite. Not sure if it was the new marinara I used or what.

I bought this Giada De Laurentis Tomato Basil Pasta Sauce on a whim when I was at Target the other day.  The recipe for chicken cacciatore called for tomato basil pasta sauce so I decided to use it. From what I could tell from the recipe, it rocked! I have a bit left in the jar so I’ll have to use it by itself to see what I think.

Chicken Cacciatore serves 4

Adapted from Cooking Light

  • 1 pound skinless, boneless chicken breast, cut into bite-sized pieces
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper
  • Cooking spray
  • 2 cups sliced cremini mushrooms
  • 3/4 cup chopped bell pepper
  • 3 cloves garlic, minced
  • 1 1/2 cups tomato-basil pasta sauce
  • 1/4 cup dry red wine
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (about 2 ounces) shaved Parmigiano-Reggiano cheese
  • 2 tablespoons thinly sliced fresh basil

Heat a large nonstick skillet over medium-high heat. Sprinkle chicken evenly with oregano, dried basil, and red pepper. Coat pan with cooking spray. Add chicken to pan; sauté 2 minutes or until lightly browned, stirring frequently. Add mushrooms, bell pepper and garlic to pan; sauté 5 minutes. Stir in pasta sauce and wine; bring to a simmer. Cover, reduce heat, and simmer 10 minutes. Stir in salt and black pepper. Sprinkle with cheese and fresh basil.

I couldn’t help myself. I’m addicted to Teddie Super Chunky peanut butter.

I took the kids to school and went to Cardio Muscle class. I came home to change and whip up a batch of my Rice Krispy Treats. Several months ago my daughter’s old class started a book club and I’ve been once since. It’s my turn to host tonight so I made some treats for the kids. The kids come fed and in their pjs. They watch a movie and eat snacks while the moms have some snacks, wine and talk about the book. I choose The Help. I love that book and thought it would be a good one since the movie is in the theaters.

Lunch was a MONTSTER of a salad.

My husband walked in while I was making it and said “WOW.” You cannot tell how big it is from the picture but it was the size of my head. I think I got a little carried away with it. I ate the whole thing and now my stomach is also sticking out like the size of my head. Oh well. At least all I got all my veggies in!

Ok gotta run….I’m getting my hair done at a new place today and my appointment is soon. Here’s to hoping they do a good job! Eeek!!

144.0…Temptations

Temptations were all around last night at dinner at Villa Capri 2. I held strong and kept to my plan. I checked out the menu online and knew exactly what I was going to order. Sometimes that backfires because the online menu and the actual menu differ and they don’t have what I want. That drives me nuts.

Back to dinner…..I splurged on some red wine (it’s good for me right?). :)

Our friends ordered fried calamari as an appetizer. They looked so good but I restrained myself. It’s hard for me to have a taste or just a bite of something. I’ll end up eating the whole thing. I guess I’m an all or nothing type of girl!

For my entree, I ordered the Mediterranean salad with Grilled Shrimp.

I ordered the dressing on the side and I’m extra glad I did because I didn’t like the one it came (it was too sweet) with so I had them bring me a side of the lemon oil vinaigrette. It was a delicious salad! It came with baby greens with chopped red onions, olives, cucumbers, tomatoes, ricotta salata cheese and three large grilled cheese.

My dinner companions had tons of delicious stuff in front of them like garlic bread and rigatoni Bolognese. I did try a little bit of the rigatoni but was able to keep it at that. Go me!  As good as some food tastes, the feeling that I fueled my body with healthy eats is better! Most of the time at least. :)

You’ll be happy to see that I did not eat Teddie peanut butter this morning. I will admit that I wanted to but felt bad eating the same thing for breakfast for almost a week. I decided to make an egg sandwich instead. I toasted a light wheat English muffin and added cooked egg beaters and a slice of low fat Swiss cheese.

This breakfast really does stick with me the best. It kept me full for a full four hours….most food doesn’t do that for me. ;)

I took the kids to school this morning. It was my daughter’s first day at her new preschool (she is now at the same school as my son). Since she had already met her teacher and seen her classroom, she was comfortable and happy this morning.

I went to Cardio Muscle class and then to Trader Joe’s. I bought some of their “Just Chicken” and decided to incorporate it in today’s lunch. It’s a container of already cooked chicken cut into small strips/pieces. I’ve had it before and it’s really good!

I make a chicken sandwich on whole wheat bread using the chicken I bought, lettuce and a little bit of light mayonnaise. I had Progresso light soup and a couple of pickle spears as well.

Before I knew it, it was time to pick up my daughter. She gets out of school 2 hours before my son. It will be like this for this year and next year they will FINALLY be on the same schedule.

I came home and had a big bowl of watermelon. Isn’t summer watermelon the best!?!

144.2…Spinach Fettuccine With Yogurt-Cream Sauce

I love when I find a recipe that tastes like it's bad for me but is actually not! Last night’s dinner turned out to be just that! I’ve had this recipe for Spinach Fettuccine with Yogurt-Cream Sauce sitting around for awhile and finally got around to making it last night. Success!

Spinach Fettuccine with Yogurt-Cream Sauce Serves 4

Original Recipe: Self.com

Ingredients:
  • 8 oz spinach fettuccine
  • Vegetable oil cooking spray
  • 1 teaspoon olive oil
  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 small red bell pepper, cored, seeded and sliced
  • 2 cloves garlic, thinly sliced
  • 1/4 cup nonfat, low-sodium chicken broth
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons reduced-fat Parmesan
  • 1 tablespoon light cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
Cook pasta as directed on package; drain. Set aside. Coat a large skillet with cooking spray. Heat over medium-high heat; add oil. Add zucchini, squash, bell pepper and garlic. Reduce heat to low; cook until pepper begins to soften, 2 to 3 minutes. Add broth; cook until all vegetables are tender, 3 to 4 minutes. Remove from heat; add pasta, yogurt, basil, cheese, cream, salt and pepper. Toss and serve immediately.
249 calories per serving, 4.9 g fat (1.7 g saturated), 38.9 g carbs, 3.3 g fiber, 13.3 g protein
I felt like I was eating a delicious cream style pasta and I loved using the spinach fettuccine. Winner! I’m really enjoying cooking with yogurt lately!

My breakfast. Teddie peanut butter on a waffle. Yeah, I know. I suck. BUT….I photographed it outside! I thought you’d enjoy a change of scenery since the food doesn’t change.

I took my son to a birthday party and managed to avoid all the pizza and cake. Another success for me! But by the time we got home, I was starving. I reheated some of last night’s dinner and made a big salad to go with it.

Honestly, I’m still hungry. I’m currently drinking water and waiting to see if I’m really hungry or not. If I am, I’ll load up on some fruit.

Tonight we are going out to dinner with some friends to an Italian restaurant. I’ve already looked at the menu online and have a couple of different healthy options in mind. I may splurge on some wine though. I think I deserve it. :)

144.8…Getting Productive

Last night before dinner I was feeling snacky so I grabbed one of my million bags of Jalapeno Popchips.

I threw a couple of chicken kabobs, corn on the cob and some baked beans on the grill. For the corn, I put a bit of butter and kosher salt on each cob and wrapped them in foil. While my husband and kids swam, I cooked dinner.

Delish! I love eating outside on a warm summer evening. I don’t want summer to end!

I was in bed early last night and had a great sleep! I felt really bad making breakfast this morning because it was the same thing I’ve had all week: Teddie Super Chucky Peanut Butter. Why is this stuff so good!?!

I put it on my current favorite cinnamon waffles and ate some cantaloupe with it. Next it was off to spin class. I had a fabulous workout and came home a sweaty mess.

After a shower, it was lunch time. I heated up some Progresso light soup (my last can in the house-not my favorite soup so I’m glad it’s gone) and made a tuna wrap. I whipped up a quick tuna salad using a bit of light mayo, red onion and pickles and put it in a La Tortilla tortilla with a bit of fresh baby spinach.

Remember awhile ago when I cleaned out my bathroom? Well I had a ton of items that I wanted to sell on eBay and I finally put them up today. It took me like 3 hours! I’m so glad that’s done! Now let’s hope they sell. :)

145.8…In Control

It’s Friday folks! The weekend is here!

I know the suspense is killing you….you are dying to know how I did on my healthy eating plan at last night’s Bunco!

Great success! I was totally in control and ate enough to be satisfied. That is hard for me when there’s a delicious buffet of food in front of me.

Bunco was at my friend Jen’s house and she had made tons of homemade Mexican food. I had a handful of chips and guacamole. It’s hard to resist good guacamole!

I decided that I could splurge on one thing. Usually I’m all about the bread basket, wine AND dessert. Last night my choice of splurge was two glasses of wine. Well worth it!

Jen made a delicious chicken tortilla soup that I had a bowl of and failed to photograph. I was too busy catching up with friends!

Jen also made this appetizer that that was chicken wrapped in some kind of dough and baked and it rocked! I had a piece of that as well. I left feeling satisfied and pleased with my restraint. Usually at Bunco, I’m known as the girl that goes for THIRDS. :)

This morning my Teddie peanut butter was on my mind again. I spread some on a toasted slice of cinnamon raisin bread and ate it with some strawberries.

I took my son to school and took my daughter to an open house at her new preschool. Afterwards it was off to the gym. I missed my normal Cardio Muscle class so I had to workout on my own. I really don’t like working out solo. It’s so boring! I much prefer classes or working out with friends.

After my boring workout, I came home to make lunch. I whipped up an egg white omelet with tomatoes, red bell pepper and red onion.  I had a huge salad to go with it. Great lunch!

Then it was off to the dry cleaner and the grocery store. We are going to grill outside tonight so I had to pick up some stuff for dinner.

I picked up my son from school and came home for a snack: a big bowl of watermelon.

We don’t have a ton of plans this weekend and I’m excited about that. After all the traveling we’ve been doing it will be nice just to lay low this weekend!

146.0…Measuring & Tracking = Success!

I’m glad you guys are fired about about my Slim in September plan! My first day of “post vacation” healthy eats was fabulous yesterday. I am already feeling better!

Last night’s dinner was simple and delicious.

Spaghetti with marinara, sautéed zucchini and a big salad. I had twice the salad that you see in the picture. I got salad happy and made way too much but ended up eating all of it. Hey, I needed the veggies!!

I knew exactly what I wanted for breakfast when I woke up this morning. More Teddie Super Chunky Peanut Butter!

I don’t know what they do to their peanut butter but it is unreal. I put on a toasted waffle…..I know….same as yesterday but this time the fruit was different. :)

My kids favorite toaster waffles are the Special K ones with red berries. I have not been able to find them anywhere. So I bought them my grocery store’s brand of cinnamon waffles. Since they don’t have the “red berries” they won’t touch them. Turns out better for me since these waffles are ridiculous! The smell of cinnamon coming out of the toaster is amazing. And with the peanut butter on top…it blows my mind. ;)

I took my son to school and went to Zumba. Such a good class today! Here’s a random fact about me: I love jumping. I actually really like jumping jacks. Yes, I’m the only one on the planet like this probably. One of my friends in Zumba today told me that she looked at me during a part where we were doing some high impact moves and she said that I looked SO happy. I was!

After changing, I got the million loads of laundry started. Then it was lunch time. I made a salad the size of my head.

More veggies! This salad had tuna, mixed greens, cherry tomatoes, cucumber, red onion, red bell pepper and Girard’s Light Champagne Dressing.  Do you know how I applied my salad dressing today? I actually measured out 2 tablespoons. Sometimes we forget what portion sizes look like and it’s a good idea to remind ourselves and measure. Keeps your calories in check!

I took my daughter to her “Dog Smart” class. We haven’t been since June and she really needed to go. She stills screams when a dog gets near her. :( Today’s class went well though….hopefully soon dogs won’t scare her.

When we returned I was hungry so I had a snack. I was really excited about this one! The kind folks over at Fiber One sent me their new cereal: Fiber One Honey Squares to try. Today was the day!

I paired the cereal with some unsweetened almond milk and went to town. It reminds me a bit of Cinnamon Toast Crunch which used to be one of my favorite cereals when I was younger. The  cereal is lightly sweetened (not crazy sweet like the Cinnamon Toast Crunch) and stays pretty crunchy the whole time. A 3/4 cup serving has only 80 calories and 40% of your daily value of fiber! Get out of here. This cereal has found a permanent spot in my pantry. Thanks Fiber One!

Back to Slim in September….I received some questions on how I track what I eat and how I’m going to go about losing the 10 pounds. Here are the tricks that help me:

  • Track what you eat. I use the “Lose It” app on my iphone. I always have the phone on me so it’s easy to update it frequently. Plus I like that I can easily add items to the program. You don’t have to track forever but it’s useful to see how much you are really consuming. Every calorie counts!
  • Measure your food! Like I said above, measuring really keeps you accountable. A serving of cereal is a lot smaller than you think!
  • Workout 5 or 6 days a week. This is what works for me. I like to have one or two rest days for my body to recover. Just get out there and move!
  • Mix it up! If you do the same exercises all the time, you body becomes used to it and it doesn’t challenge you anymore. I like to do a mix of cardio (spin, running, Zumba) and weights. Don’t be afraid to pump some iron. You will NOT bulk up….you’ll only get sexier and stronger.
  • More measuring! Take your body measurements! I know I weigh myself everyday (works for me but not for others) but your measurements really show your true progress. Remember, muscle weighs more than fat so sometimes that scale may not be moving in the direction you’d like.
  • Drink a lot. Water that is. It really helps me with weight loss. Sometimes you think you are hungry when you really are thirsty!
  • Nothing is off limits. If you deny yourself the foods you love, you will go nuts. Everything in moderation folks. You need to develop a Way of Life, not a DIET. Diets don’t work in the long run.

There you go folks. Now for those of you that want to loose those last few pounds with me, get to it! :) Take your measurements now and we’ll check back in at the end of September and see how we did!

I’m going to Bunco tonight and am excited to see my friends! With all the traveling I’ve been doing, I haven’t seen them much lately. Now that I’ve preached about all my weight loss tricks, let’s see if I can be sensible tonight with my food choices. :)

147.2…I’m Back….again!

Well hello there! I’m back from my last and final Disney Cruise of the summer! I enjoyed our second trip to Alaska almost as much as the first time. I think because I had seen it already, it wasn’t as exciting but it was still breathtaking.

These photos were taken on the last day at sea. It had been raining most of the trip but on the last day, the sun came out along with a a beautiful rainbow.

The other day that it did not rain was when we went to Tracy Arm to see the glacier. This time the ship got even closer than the last!

What was also different on this cruise was that I worked out 5 of the 7 days we were on the ship! Go me! Once I even ran 5 miles with one of our friends on the jogging track on the ship. I hadn’t run that far since the half marathon! My legs were definitely feeling it for a few days after. I also ate a bit better as well.

Pros and Cons of the second Disney Cruise to Alaska:

Pros:

  • Not as cold (especially at Tracy Arm)
  • I worked out and ate a bit better = not too bad of a weight gain
  • We had the later seating for dinner this time = more relaxing & less stressful with the kids
  • My daughter liked the Kids’ Club this time and went more often = more breaks for hubby & I
  • I saw Orca whales. It blew my mind. I have always wanted to see an Orca whale in person (besides at Sea World). Unfortunately I don’t have a picture…it all happened too fast!

Cons:

  • It rained at EVERY port.
  • Because of the weather, the boat rocked a lot more
  • Besides the Orca whales, I did not see as much wildlife

Now that I’m back I’m ready to get back to business. Remember I mentioned that I wanted to loose those “half marathon/vacations” ten pounds?? Well, I’m on a mission starting today. Who’s with me? Anyone want to loose those last few pounds? I’m going to call it “Slim in September.”

This morning I started off the day right with a healthy breakfast. I was so excited to eat the Teddie Peanut Butter that I received from OpenSky before I left…the Super Chunky variety is awesome! I put it on a toasted waffle and had some strawberries on the side.

Today was a big day at our house. My son started 1st grade today! I have no idea where the summer went! We all piled in the car bright and early this morning and took him to school.
 

After the big drop off, I went to Zumba class, to my nail appointment and to pick up a sandwich at Subway for lunch.

My daughter starts school on Monday. She will be going to the preschool at my son’s school. The preschool teacher comes to each child’s home before the school year starts and today was our turn. I think that it is such a great idea to have the teacher come over and see my daughter’s environment, meet the family, etc. Now she won’t be so nervous on Monday when she starts her new school.

Eventually it was time to pick up my son from his first day back. I ate an apple on the way.

I’ve done a good job tackling the unpacking and getting all the suitcases put away. The amount of laundry I have to do is ridiculous. I’ll save it for another day! Welcome back to me!
