I was really excited about last night’s dinner that I bought from Costco:

Spicy tuna roll and spicy salmon rolls. I was happy!!!

Breakfast this morning was an egg beater & Swiss cheese sandwich on an English muffin with a side of strawberries and blackberries:

After taking the kids to school, I went to Cardio Muscle class. I was going to go to Zumba but I decided I was too pooped to go. Sometimes when I go to both classes, it exhausts me for the rest of the day. Since we are going to our club tonight with some friends, I didn’t want to be super tired.

Amazingly, I found the energy to clean out my garage "pantry” storage. All of a sudden I was inspired to take everything out of it:

So much better. I am happy. I built up an appetite after all that. For lunch I heated up some leftover pasta and sauce and added some broccoli:

I went to pick up the kids and now I’m getting packed up for tomorrow. We are all going to Los Angeles. The kids are going to hang out at my sister in law’s house and we are going to USC football game!

We are coming back on Sunday to get ready for our Halloween party that our club throws. You may not see me until Monday. Sniff Sniff.

Ladies Night last night was fabulous in all ways: great wine, delicious food and fabulous company!

We went to Mille Fleurs restaurant in Rancho Santa Fe. They offer modern French cuisine and the restaurant itself is really charming!

I started with the first of two glasses of Chardonnay:

One of my friends couldn’t decide on what soup to order as an appetizer so they brought her both to try. Lobster bisque and a creamed mushroom soup….both were good but the mushroom soup was the best!

We all were presented with a complimentary blue cheese soufflé from the chef:

It was topped with pomegranate seeds and was pretty tasty!

Everyone ordered the mushroom soup except for me. For my appetizer, I had my eye on the Mahi Mahi Tartare:

It was served with these little toasts on the side. It was so fresh!

For our entrees, we all got the same thing: Weiner Schnitzel of Veal:

A few of my friends had had it before and highly recommended it. It came with an arugula salad, caper berries and a lemon butter. I’m so glad I ordered it…..it melted in your mouth.

We all splurged and ordered dessert. I’m usually a chocolate girl all the way but the chocolate option didn’t appeal to me so I went with the Apple-Rain Strudel:

It was accompanied by cinnamon, almonds, caramel sauce and vanilla ice cream. It was ok….I probably wouldn’t order it again.

I really had a great time! As soon as I got home, I went to bed!

I took the kids to school, then went to Zumba. Came home to change and do some random stuff around the house and then went to run some errands. I stopped at Subway for lunch:

Then made a quick trip to Costco. I grabbed something for dinner that I’m excited about. :)

I picked up the kids and now we are chilling at home. I don’t plan to do much tonight except for some laundry.

My hard work is paying off! Isn’t it amazing how much better you feel when you eat healthy!?!

Last night’s dinner was some more of the mushroom barley soup that my sister in law brought over on Sunday:

It’s good but I’m over it now. After dinner I started feeling achy and really cold…like I was coming down with something. Uh oh!! I had a great sleep and felt better in the morning.

For breakfast I whipped up my egg beater and Swiss cheese sandwich on an English muffin with a side of strawberries and blackberries:

I took the kids to school and then went to a room parent meeting at my daughter’s school. Afterwards  I went to Zumba and had a great workout. Came home and showered and made lunch:

Turkey and Swiss sandwich on wheat with mustard and lettuce. I also made a big salad full of veggies. It didn’t really taste that great….am I getting sick? Ugh.

I went to pick up my daughter and took her to McDonald’s for an ice cream cone. I was feeling super tired so I ordered an iced tea and that actually made me feel a lot better. We picked up my son and came home to change for our holiday pictures!! My good friend Lisa is the most awesome photographer….I cannot wait to see how this pictures turned out!!

Gotta run and get ready for Ladies Night! Vino!  Yippee!!!!

Which came first the chicken or the egg? Hahaha….I’m running out of time and can’t think of a good question. You really don’t have to answer this unless you want to. :)

I finished my Monday healthy eating day with success! For dinner I sautéed chicken, broccoli, carrots, onions, mushrooms and garlic and then poured some Trader Joe’s Thai Curry Sauce on it and let it simmer. Served next to brown rice, it was an awesome meal….at least in my opinion….

Hubby said, “This is ok.”

Me: “This is the fourth time I’ve made this and the three other times you liked it.”

Hubby: “Ok, I like it then.”

I had to giggle. Oh well, I really liked it. But you could put curry on a shoe and I’d eat it.

I thought dinner was good….but dessert was even better:

Low fat wheat waffle with some Peanut Butter & Co Dark Chocolate Dreams (chocolate peanut butter). Must have this snack more often….better yet…might as well have it for breakfast! It would be great with a side of strawberries. Note to self.

I dropped the kids off at school and went to Great News for a cooking class. Today’s class was entitled: Fall in Love with Pork. Now, hubby doesn’t eat pork. I go to get recipes and pork is usually pretty interchangeable with chicken which he will eat. But seriously….I go to eat all the delicious food!

The first recipe was Asian Pork and Shiitake Mushroom Sliders with Hoisin Ginger Sauce in Lettuce Wraps:

I loved this! This would be great on little slider buns too! The sauce was a little sweet and spicy. These would make good Asian style meatballs too!

The next plate has two recipes. The one on the left was Spanish-Style Pork Scallops Stuffed with Serrano Ham and Manchego Cheese with Romesco Sauce. The one on the right was Chili Orange Herb Marinated Pork Tenderloin with Cilantro Orange Crema on a bed of Green Chili Rice with Corn:

I loved the Pork Scallops. It was basically two pieces of pork pounded very thin stuffed with ham and cheese and then fried. Ahhhhh. I was in love. The second pork was good but it was the rice that stood out. Loved it! It would be perfect for some of the Mexican dishes I make.

The next recipe was Brown Sugar and Molasses Brined Boneless Pork Chops with Chili Spice Rub and Mustard Horseradish Steak Sauce:

This was so juicy and delicious! I especially loved the sauce. It reminded me of barbecue sauce but with more of a tang and a kick!

Last, but certainly not least, was dessert: Caramel Apple Pecan Squares:

Holy yum. Loved this! It would be so delicious with a scoop of vanilla ice cream on top! I was thinking of making an apple pie for one of my Thanksgiving desserts but this may replace that!

After class I went over to Road Runner Sports to get some new running shoes. I put a hole in the side of my old pair. I guess that shows they get some use huh? :)

I picked up the kids from school and now I’m just about reading to try out my new kicks!

Happy Monday!

Today’s breakfast was an egg white sandwich on a sandwich thin with a Laughing Cow sun-dried tomato cheese wedge and spinach. On the side was a bowl of strawberries and blackberries:

I took the kids to school and then went to Zumba.  I came home to change and grabbed an apple to eat on the way to pick up my daughter from school.

Mushroom Barley soup. Mmmmm….perfect for a rainy fall day! Afterwards it was time to pick up my son from school.

So far so good in my healthy eating plan for day. Hubby wanted to go to the club for Monday night football (HOT WINGS!!!) but our friends can’t make it. I’m not sad….I think hot wings would definitely derail my healthy eating plan for the day!

After all this weekend’s delicious eats, I’m ready to get back on track tomorrow!

Today was a great day….nothing in particular to do. I love those days! I woke up around 7AM and started getting stuff done immediately: put laundry away, washed sheets and towels, unloaded the dishwasher and made breakfast:

Egg beaters, Laughing Cow Chipotle cheese wedge, taco sauce and sautéed spinach, onions and zucchini in a wheat tortilla.

After breakfast, the baking bug hit me. I had a recipe for chocolate chip cookies that I’ve been meaning to try forever. So glad I did!

They were a huge hit! My sister and law and her kids came over  to play for the day and the cookies started to disappear fast! Try this recipe!

Chocolate Chip Cookies

2 cups plus 2 Tbsp all-purpose flour

1/2 tsp baking soda

1 tsp salt

3/4 cup butter, melted and cooled until just warm

1 cup brown sugar

1/2 cup white sugar

1 egg

1 egg yolk

2 tsp vanilla extract

1 1/4 cups chocolate chips

Preheat oven to 325 degrees. Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking soda and salt. In your mixer, cream butter and sugars. Beat in the egg, egg yolk and vanilla. Stir in flour mixture, followed by chocolate chips.

Drop by 1/4 cups (I did them smaller) onto the baking sheet and pat lightly so the cookie is an even thickness, not a ball shape. Cookies with spread as they bake and this ensures a more even spread.

Bake for 15-17 minutes, until just turning brown all over. The edges should only be very slightly more brown, if at all, from the rest of the cookie. Allow cookies to cool before removing them from the baking sheet. Makes 18-24 large cookies.

I made pizzas and salad as well. The last time I was at Costco I bought these pizza crusts that came with sauce. They were ok….the crust was a little too doughy for us.

I ended up having another slice a little later. We hung out for awhile  and then I went to get my nails done.

When I got home it was time to make dinner. Another new recipe! Sesame Noodles!

I followed the recipe exactly except that I added chicken and broccoli. I also halved the recipe. Hubby really liked it….there was only a tiny bit left after we were done. Delicious!

I’m not sure how I feel about tomorrow being Monday but I think I need to get back to my healthy routine….at least for a few days right?

Hi everyone! How’s your weekend treating you? I’ve been enjoying a lot of good eats!

Friday night while my mother in law was with the kiddos, I met hubby at the club for dinner. I had a glass of wine and some prime rib:

Mmmm. We went home to meet the kids and everyone went to bed.

Yesterday morning, hubby and I made pancakes for everyone for breakfast. I put some Trader Joe’s pumpkin butter in mine:

I love pumpkin butter in pancakes. Then it was onto making the pumpkin cake that I was bringing to Dina’s party last night. The recipe was from my favorite cooking instructor, Phillis Carey. While the cake was in the oven, I made the caramel sauce.

Sugar, butter, dark corn syrup, heavy cream and salt:

Bring it to a boil:

Let it boil until golden:

Add in some more heavy cream and stir until caramel melts and is smooth:

I think I let it get too dark but it was good anyway!

We had a quick lunch of bean and cheese burritos before we took the kids to a birthday party:

My babysitter brought us these fabulous tortillas. They are so good! Of course I had some Cholula with my burritos. :) At the party I had a slice of cheese pizza and a couple of bites of my daughter’s chocolate cupcake.

When we got home it was time to prep the next dish I was bringing to Dina’s house: Indian Butter Chicken….my favorite meal ever! I went to the same party at her house last year and made the same thing. You can see the post and find the recipe for this sinfully delicious dish here.
