Hello everyone! I'm going to have to breeze through this post....I still need to load the car and go pick up the kids at camp and then it's vacation time!

I had a blast at Ladies Night last night for sure! Love spending time with the girls! While I was getting ready, I had a glass of wine at home:

Dina picked me up and we were on our way to Firenze! I had one glass of Merlot during the evening:

Normally the hubby and I split the Chopped Caesar salad but I had it all to myself last night. :) I thought about ordering a different appetizer to change it up, but in the end I went with my usual:

For my entree...I went old school again: Calamari Marinara!

Dina ordered it too since I talk about it so much. Unfortunately, I think there was a different chef last night. Don't get me was still good but not as good as usual. :( My bowl looked a little like calamari soup and Dina's lacked enough sauce. Boo!! For the first time, I did NOT finish my bowl. I think the portion was even bigger than normal. I still enjoyed it though. We decided to skip dessert....good thing...I did not need it! :)

Breakfast this morning was a light wheat English muffin with Barney Butter and a side of watermelon:

I took the kids to camp and went to Zumba. Came home, cleaned up and began to pack up. For lunch, I made a bowl of the rest of the leftovers in the fridge: Turkey Tamale Pie, Chili, Pico de Gallo and chopped onions:

I also made a batch of Rice Krispy treats for all the kids this weekend. Ok...I need to get to work. Hopefully I'll be able to blog in Orange County but we'll see! :)
Do you have any vacations coming up? After this trip, our next is back to Orange County for a wedding during Labor Day weekend.

I was excited for this morning's breakfast. I really wanted more of the Pico de Gallo that I made last night so I thought an omelet would be perfect. I put mushrooms and spinach in this egg beater omelet:

I took the kids to camp and then went to Zumba. I had a great workout today!! I showered quickly and took my lunch to go. Turkey, swiss cheese and mustard in a wheat tortilla with an apple:

I had a wax appointment (fun). Afterwards, I came home, put the laundry away and got some random stuff done. Then it was off to get my nails done. First, a coffee was in order:

Ahhhh....much better! Now I'm back home munching on some watermelon:

The kids have "late night" at camp where they have a bbq dinner, watch a movie, etc so the hubby will be picking them up because I have Ladies Night tonight. Oh yeah! I'm especially excited because we will be going to my favorite restaurant: Firenze. You'd think I'd get sick of it right?? No way!!

Tomorrow afternoon we are taking the kids to stay in Orange County for the weekend with some friends/family and their kids. If I don't get to blog before I leave, hopefully I'll have a chance on the trip.

Do you prefer short or long cuts of pasta? Most of the time it's long for me. I love to twirl my pasta on my fork! :)

When we last left off, I was about to pick up the kiddos from camp. I had one of these along the way:

This flavor (Dark Chocolate Almond) is my favorite. I took my son to get a hair cut and then came home to fix dinner. I decided to put some of the Greek Tomato Salsa that I made on one of Trader Joe's Mediterranean Flat breads and broil it. I then put that on a bed of mixed greens drizzled with balsamic vinegar:

Amazing. There were no words.
A bit later I had some Special K Cinnamon Pecan cereal with almond milk for dessert:

I then went over to Lisa's house to watch the Bachelorette. What a boring episode! I was able to unload a lot of my barbeque leftovers there though. :)
Breakfast this morning was Fage yogurt with Fiber One cereal and strawberries:

I took the kids to camp and made my way over to Great News for a cooking class. Today's class was Grilled Appetizer Party.

The two recipes on this first plate were Pesto & Shrimp Grilled Pizzas (on the left) and Grilled Polenta Triangles with Gorgonzola & Walnuts:

The pizzas were excellent! You could put so many different toppings/sauces on them! I was not a fan of the polenta triangles. Maybe the gorgonzola threw me off?

The next two recipes were Grilled Steak Lavosh Rolls with Arugula, Goat Cheese and Pepper Strips (on the left) and Bruschetta with Prosciutto and Grilled Vegetables:

Loved the steak rolls!!! Delicious! The bruschetta was also yummy! I love that you can change the toppings for each of these recipes almost any way you want!

Last was Pork Satay with Peanut Sauce and Cucumber Salad:

Fabulous! This would also be great with chicken or shrimp!

After class, I ran to Costco to grab a few things and stopped by World Market. I don't go there very often and I'm not sure why....what a unique store!!! I bought a giant martini glass to serve as a serving dish. I can't wait to use it! I picked up the kids from camp and came home. I threw a few loads of laundry in and then went on a walk with Lisa and Cathi.

When I got home, I made another batch of Emerile's Pico de Gallo to go with some leftovers that I pulled out of the freezer: Turkey Tamale Pie:

138.2 yesterday; 139.4 today

Happy Monday!!!! Hope your week is off to a good start!

Yesterday's breakfast was the rest of the English Muffin bread. One piece with honey and butter and the other with peanut butter:

I need to find that recipe and make some more of this right away! I got dressed and we headed over to our friends house for some champagne before we went to the Del Mar Race Track:

Gotta love those sideways photos! We made our way over to the track and sat down and my friend immediately ordered the tempura green beans with a wasabi ranch dip:

I'm glad she did! Those were awesome! The four of us split two bottles of wine:

For lunch I ordered the carne asada plate:

It was excellent! Loved the guac and salsa! For our first dessert we ordered the mudd pie:

My friend thought it would be cute to hold up our losing bets. :) Dessert number two was a hot fudge sundae and came many races later but I didn't get a picture. I was talking to someone when it arrived and it got attacked before I could get the shot. :( It was tasty though! We had such a great time at the races!! It was a nice break after the crazy barbeque Saturday night. :)

We met my sister in law, her kids and my kids at Tio Leo's Mexican Restaurant for dinner. I was not very hungry so I just had some chips, salsa and guacamole and called it a night.

Monday usually brings healthy eats over here. :) Breakfast was an egg beater sandwich on a light, wheat English muffin with a slice of low fat Swiss cheese. On the side I had some juicy watermelon:

I took the kids to camp and then went to both Cardio Muscle and Zumba classes. I was there to bring it today! I love days like that!!
Came home, changed and made lunch. Leftovers salad: mixed greens with the tomatoes and onions from Saturday night's hamburgers all drizzled with balsamic vinaigrette. I had one of those yummy burgers (minus the bun) on the side:

That's all I have to report on today. I have to pick the kiddos up soon and take my son for a hair cut. Pretty exciting stuff. :)
What has been your most exciting purchase lately? I just bought the flip video camera on Amazon and I'm really excited about! Our video camera is getting a little tired so it's time for a new one!

137.6 yesterday

Sorry about my lack of post last night but I was too tired! The barbeque was a success but it was crazy trying to barbeque for 23 people....yep, the count went up....again. I don't know where all these people kept coming from! :)

Friday night after all the prep work was finished, this is what my fridge looked like:

For breakfast yesterday morning, I pulled out the banana muffins I made earlier in the week bagels, some cereals, milk and juices and some English Muffin Bread that I found hiding in the freezer. I had made it almost a year ago and was worried it wouldn't be very tasty anymore but I was wrong!

I had three slices of it with butter and honey. YUM!! Where oh where did I get the recipe for that? I'll have to go back through my recipe collection to see! Must make this again!

Then it was time to get ready for my friend's bridal shower. It was at the Grand Colonial in La Jolla. I had never been to there before and it was a very cute hotel! The room for the shower was set up beautifully:

Lunch was buffet style and I had a bit of everything:

Salad with balsamic vinaigrette, grilled veggies, chicken picatta and penne pasta. I had some tiramisu for dessert. Guess I didn't get a picture? Then it was time to high tail it home to get the barbeque on. I was really started to get stressed out because I didn't have a ton of time to get it all done but somehow it all worked out. I worked my butt off! I didn't take many pictures because it was too crazy trying to cook like 18 burgers, 20 hot dogs and just as many ears of corn plus getting all the sides and dessert out. Whew!

I had a a cheeseburger with chili and a side of cole slaw and that was it. I didn't eat any appetizers (too busy) and no dessert (shock!). I actually wasn't super hungry after eating all that food at the shower. The burgers I made tasted fabulous!! I used Barefoot Contessa's recipe for Niman Ranch Burgers but I didn't use Niman Ranch meat...just Trader Joe's. They were so moist, juicy and light which was great but they were hard to cook on the grill. They kept falling apart. I need to work on my burger technique for next time. :) I would definitely make those again though!

The cole slaw I made was Bobby Flay's recipe and it was also delicious! Another winner!

While everyone was having dessert: Rice Krispy treats, Monster Cookies, Chocolate Oatmeal Almost-Candy Bars, we also had champagne. I relaxed for about 3 minutes before I started the clean up. I had a ton of help so it wasn't too bad. Then it was bed time! Yeah!!!

So, here I am, waiting for the copious amounts of people staying at my house to wake up so I can go eat the rest of the English Muffin bread. :) My sister in law is taking my kids to Sea World today so hubby and I can meet some friends at the Del Mar Race Track. I'm excited!

What was the best thing you ate this weekend? Mine was definitely the burger!!

So last night I had to try the Chocolate Oatmeal Almost Candy Bars:

Wow! Crazy yummy but very rich! I cut a small piece and only ate half. The rest are chillin in the fridge. I wasn't crazy about the raisins in them so I'll leave those out next time.

After a great night's sleep, I woke up feeling almost 100% better. Breakfast was Ezekiel toasted with almond butter and a side of watermelon and cantaloupe:

I took the kids to camp and then went to Cardio Muscle class. I decided to skip Zumba...I had too much cooking to do. I came home, cleaned up, started the many piles of laundry and made lunch. I really needed to clean out the fridge so I ate the rest of the pasta that I had the other night:

Then, the cooking began. I first made Paula Deen's Monster Cookies minus the raisins:

I've made these before...fabulous....they have everything in them! Then it was off to pick up the kiddos from camp.

Next up was the chili. I used this recipe...never tried it before but the reviews looked great!

I tried a little taste before I put it in the fridge. Tastes great! Yes!!

Forgot to mention that during all this cooking, not only did I have my two little ones but my sister in law's four boys too (their parents are at an event tonight and will watch our kids on Sunday). So dinner was a no-brainer: pizza. I ordered cheese for the kids and veggie for me. Here is the first of two slices with a side of ranch. I love ranch dressing on my pizza!

After dinner, I made a 4 Layer Dip. The recipe is called a 5 Layer Dip but a lot of us don't like the black olives that the recipe called for so I left them out:

After that I made tons of lemonade and a french onion dip (sour cream & Lipton Onion Soup Mix) for chips.
I have 6 kids to put to bed tonight....hubby isn't coming home until later. I think it's time for a vacation don't you? :)
What are your weekend plans? I've got the bbq Saturday night (by the way, the people count is now up to 19) and on Sunday, hubby and I are going to the Del Mar Racetrack with some friends.

Thank you so much for all your well wishes! I feel SOOOOOO much better today. Yes!!!!!

Yesterday evening, I finally pried myself out of bed to make some dinner. All I wanted was penne with marinara sauce. So...voila!

Whole wheat penne with marinara sauce and some romano cheese. It was a bowl of heaven!

My appetite was back this morning (should I be happy about this?) and I was craving an egg beater sandwich. I put it on a bagel thin with a slice of low fat Swiss cheese. On the side was some watermelon & cantaloupe:

I took the kids to camp and went to Zumba. I'm still not 100% so I was really dragging in class. I burned about half the calories I normally do. Oh least I did something! I changed and went to the mall. I had Subway for lunch:

I had to buy my son some new clothes for school next month. He is starting kindergarten and they have a certain dress code so I needed to buy a bunch of stuff. I may have also bought a few shirts for myself. :)

Then there was a glorious moment:

Golden Spoon frozen still my heart. I had the BEST combination today: Graham Cracker (love this one!), Just Chocolate and Cake Batter. Then it was grocery time...we are having another barbeque this weekend (18 people!) so I needed a ton of stuff.

When I got home, I started baking for this weekend. I decided to make these Chocolate Oatmeal Almost-Candy Bars. I don't know where I originally got the recipe but you can see it here. I haven't tried one yet but they are still cooling but check it out:

After they came out of the oven, we took the kids to Pei Wei for dinner. If you ask my son where he wants to go to dinner, he will always say, "Noodles!" which means Pei Wei. I had my standard kid's size honey seared shrimp with brown rice and veggies:

That's that. I'm excited to go to bed tonight. I'm still a little tired and weak. I need my energy for some serious cooking this weekend!

Did you ever wear uniforms when you were in school? I had to wear uniforms from kindergarten through high school. It was weird in college when I finally could choose my own clothes!!

When we last left off, I was about to go on a walk with Lisa. We had a great walk....when I came home I was ready for dinner!

I decided to have the leftovers from Firenze last Thursday. I usually give leftovers about a week before I threw them away so I was within my window.

I got the kids to bed and that's when I started to feel it.....the beginnings of a UTI. I get them every so often and if you've never had one before, count yourself lucky. I wouldn't wish it on anyone. I started chugging water and I took one of the PX meds for it leftover from the last time got one. I had hubby bring me home some cranberry juice after his work dinner. I think I finally felt slightly better around 11PM because that's when I fell asleep. I woke up feeling bad and started with the water and cranberry juice again. I needed something in my stomach because the medicine is strong so I had a light wheat English muffin with almond butter (my new favorite)....nothing else sounded good.

I got the kids to camp, picked up a PX for antibiotics and spent the rest of the day in bed. I have been living on Wheat Thins and cranberry juice. I picked up the kids and laid back down for a bit. Hubby is working again so I guess I need to get myself up for some dinner now.
Sorry this is such a downer post. Boo!! Hopefully tomorrow I'll feel better!!
